French Italian here, I make very authentic roman pasta dishes but also love cooking pasta and mixing them with my homemade Sichuan chili oil or gochujang with pecorino cheese. Fermented chili paste or kimchi both go very well with any cheese but especially with sheep milk cheese or aged cheese.

I know Aaron is the master chef behind these recipes, but Claire is the one who really sells it. I used to work in a banquet kitchen (as a non-chef) and a good palette and true understanding of flavors is less common and more coveted than you’d think. ❤

I just received your beautiful cookbook. I haven't cooked anything yet, but I really appreciate a large, color picture of the food for each and every recipe!!!! Looking forward to making them. I lived in Seoul, for a couple of years back in the '50's, next to the Han River, and wow, South Korea has come a long way. Lived in the Bando Hotel, the premier hotel back then for a year, with my family, before our house was built.

@@AaronandClaire Well, my stepfather did. Poverty was everywhere after the war. He worked for the U.S. government to help U.S. corporations get set up, to rebuild S. Korea. The orphans were particularly sad to see. I was just a kid myself and realized how lucky I was, and we moved from India!

I add a runny egg on top! I am OBSESSED with this dish! This is so easy and so satisfying for a creamy pasta lover!!! It is also surprisingly less salty than you expect, so you may need to add more salt to taste at the stage that Aaron did it. I sometimes use just onion/shallot instead of green onion. I may prefer the former over green onion, I think it is even more fragrant. I am an onion lover though.

The cream is the sauce helps people who don't like spice enjoy the lovely flavors spices put into the dish. Love your recipes! You've made Korean cuisine accessible for me. Highly recommend your cookbook. Some cookbooks have 3-5 recipes that are actually doable or appealing. I find all yours doable and almost all are appealing to me. Home run.

Not "Authentic"? It looks like real food to me. What is "authentic" anyway? All the chilis Korean cuisine employs didn't exist on the peninsula until they were brought over in the 16th century. Flavors in food are like colors in painting: use what makes the end product work. :)

I've made gochujang, doenjang, kimchi and ssamjang carbonara. Gochujang being my favorite one...being Italian, well doesn't matter, your recipes are so good ❤👍 I made a kinda similar version but vodka sauce inspired, with gochujang, green onions and soju. Btw in Italy fettuccine Alfredo (burro e parmigiano) is just butter and parmesan. Much love from Italy Aaron and Claire ❤

seen this today and just had to try it ... ended up using penne pasta , 2% milk , and pre-grated cheese since its what i had on hand ,but it was still delicious . i had accidentally bought the hotter gochujang container a while back accidentally and its been too hot for most thing for me , but this paired perfectly since the dairy kills some of the heat. thanks as always for another great recipie

I use vegan substitutes like Vegan parm or nutritional yeast and a bit of vegan mozzarella. Then some roasted chicken breast. Fake cheese, real meat and very tasty😂
