This cake is a treasure! Incredible taste and benefits! I don't eat sugar. You have to try this! You will definitely love the taste. ✌🏻🥰
Cooking recipe and ingredients:
3 eggs.
Add sweetener to taste, I used stevia.
Mix.
160 gr. (5.6 ounces) carrots.
30 gr. (1 ounce) walnuts.
1 handful of dried cranberries.
1 handful of raisins.
Top up with cold water for 15 minutes.
110 gr. (4 ounces) rolled oats.
Grind.
3 tablespoons coconut oil.
Melt it.
30 gr. (1 ounce) almond flour.
Add dried fruits.
1 teaspoon baking powder.
1 teaspoon cinnamon.
Mix.
Grease a 14 cm diameter frying pan with vegetable oil.
Use parchment paper.
Pour the batter into the frying pan.
Cook over low heat for 30 - 35 minutes.
Allow the cake to cool.
10 gr. (0.4 ounces) instant gelatin.
Top up with 30 ml cold water. (1 fl oz).
100 gr. (3.5 ounces) cottage cheese or ricotta.
130 gr. (4.5 ounces) plain yogurt or sour cream.
1 teaspoon vanillin extract.
Add maple syrup to taste.
Grind with a blender.
Melt the gelatin for 15 seconds. Gelatin should not boil!
Mix.
Prepare the form.
Pour the curd mixture onto the cake.
Garnish with carrots and nuts.
Place in the refrigerator for 3 hours.
