With vanilla pudding! This apricot cake with crispy almonds and quark is quick and easy to make. Apricot cake from the tray. It is the best apricot cake I have eaten in a long time. The moist cake is unbelievably delicious. You have to bake this quark cake recipe! This recipe for cake with apricots is simple and delicious.
Ingredients / Recipe: (1 cup = 250 ml)
The creme:
1 egg
3 tablespoons sugar
250 g quark (or cottage cheese / cream cheese) 1 cup
125 g crème fraîche or sour cream (1/2 cup)
1 pack of vanilla pudding (37 g)
The dough:
2 eggs
80 g sugar (2/5 cup)
1 pack of vanilla sugar
70 g oil (1/3 cup)
150 ml vanilla yoghurt (3/5 cup)
140 g flour (1 cup)
50 g ground almonds (1/2 cup)
2 teaspoons baking powder
2 heaped tablespoons corn starch
Baking pan: 18 x 28 cm (7 x 10.5 inches)
Pour the dough into the baking pan.
Halve 6 apricots
The apricots can be sweetened if they are too sour (like here).
Pipe the cream on.
100 g almonds (about 3/4 cup)
50 ml cream (1/5 cup)
2 packages of vanilla sugar (8 g each, 3 teaspoons)
1 teaspoon corn starch
Mix well.
Spread over the cream.
Smooth it out a little.
Bake the apricot cake at 170 °C (338 °F) top and bottom heat for 45 minutes.
