I make a chilled orzo pasta salad with asparagus, cherry or grape tomatoes, parmesan, and a garlic & lemon vinaigrette. A hit in the warmer months.

That looks delicious. Jamie Oliver used Orzo in one of his recipes and he said for a cheaper alternative take cheap spaghetti and he pressed the bag over the edge of his work top working along the pasta and it broke into tiny pieces. Worked fine. 😋

We call that pasta risoni and very popular with the Greeks. I never ever thought of using risoni instead of Arborio rice. I have always had a problem cleaning leeks so that is a very good and easy way of dealing with the dirt. That is a very good easy recipe - sorry you are not in the pink

I have eaten Risotto but I thought I had cooked it wrongly cos the rice was sloppy. I have since learned that Risotto rice IS sloppy and I don't like sloppy rice so I don't eat it. HOWEVER this looks NOT sloppy and even if it was a bit wet it is Pasta and I have some Orzo so for me this is a 'must try'. AND I can make a single portion easily. Thank you.

It's quite a fine line between too stodgy and soup. A proper risotto has to be just right. I find also that some restaurants give you way too much of it. Its filling and so you don't want too much

You could so vary that bad boy! Swap chorizo for mushrooms (great if veggie). Swap leeks for onions. Add spinach or frozen peas near the end…
