Just made this tonight. It is off-the-charts good! I made a few minor (i think) substitutions based on what I had on hand that seemed to work: I swapped a dry vermouth for the Sherry, used a turbinado sugar instead of white, and used Hamilton pot-still Gold where you used Appelton.

Made this tonight, it was awesome. I’ve done the Alton Brown recipe and a few different single serve recipes in the past and while those were all great this was clearly better. I’m tempted to try it with separating the yolks and beating the egg whites first, but doubt it will make a major difference. Got a lot of nog to finish first regardless

For those wondering, I added all of my rum with the eggs because I forgot the warning about possibly cooking the eggs and it did not do anything weird with the eggs and it ended up being smooth and creamy. This recipe is delicious from the little I tasted during bottling!

I've definitely been in the mood for eggnog lately, and I could very much see myself making this. while this is obviously a slightly different topic (and isn't conducive to aging), but do you have any plans for a video on single-serving eggnog cocktails (or a holiday flip)? I've been doing them as 1-off drinks recently (though having made half a dozen or so now, maybe I should just do a batch) and they've been very tasty and a lot of fun (a milkshake blender is probably mandatory if someone wanted to make them consistently, that much shaking would get old fast).

You can pasteurize your cream and egg base to help kill the bacteria first. Find an egg nog recipe with that step and follow everything else as per Derek’s (or any raw egg eggnog).

As I am watching this video, I am drinking my second glass of homemade eggnog. We do it slightly different, heat cream mix to almost boiling and slowly wisk it into egg mixture. Added dark rum at the end.

Regarding the proofy rum de-naturing the eggs if added in the wrong order, I can testify that I recently cracked an egg straight into 55%abv rum and the egg whites cooked IMMEDIATELY

Have you done this with yolks instead of whole eggs? Was there much of a difference? I tend to taste more egginess when using whole eggs in eggnog, but haven't tried this specific recipe yet. There's absolutely no allspice dram where I live so I'm waiting on my allspice dram to finish infusing before I can make it.

I do not. But since it calls for eggs and whole eggs I’d just divide by that. Divide all ingredients by 6 to use 1 egg (will equal 1/6 total recipe), divide by 2 to half the recipe and use just 3 eggs, etc.

I’ve had a lot of success with my vermouth and sherry in the fridge. 6+ months easily But Morgenthalers recipes call for even more sherry and he keeps batches for several years

The risk from getting salmonella from egg yolks is negligible. I wouldn’t worry unless you have underlying health issues or a compromised immune system.
