This eggplant pasta recipe was taught to me by a famous chef in Milan! I cook it almost every day!

Ingredients and recipe:
1 eggplant.
Cornstarch.
Olive oil.
1 red onion.
2 cloves of garlic.
1 carrot.
1 red pepper.
Salt.
Black pepper.
Paprika.
Spaghetti.
Green onions.
Sweet chili sauce.
Soy sauce.
1. Dice 1 eggplant and place in a bowl.
2. Sprinkle with cornstarch and mix well.
3. Fry in olive oil until golden brown and set aside.
4. Finely chop 1 red onion and fry in olive oil.
5. Finely chop 2 cloves of garlic and fry with onion.
6. Cut 1 carrot into strips and fry with onion.
7. Finely chop 1 red pepper and fry with vegetables.
8. Salt, pepper, add paprika and mix well.
9. Add spaghetti to boiling water, salt and cook for 12 minutes.
10. Put the finished spaghetti in the fried vegetables and mix well.
11. Add sweet chili sauce, soy sauce and fried eggplant.
12. Sprinkle finely chopped green onions on top and mix well.
