Betengan - Egyptian Eggplant recipe
Ingredients:
1 eggplant
1 green pepper
1-2 tomatoes
Salt
2-3 cloves of garlic
2-3 tablespoons of white vinegar
Grape seed oil for frying
Instructions:
- Start by washing the eggplant and slicing it into desired thickness. Slice the green pepper and tomatoes as well.
- Sprinkle some salt over the eggplant, green pepper, and tomatoes to keep the color and texture.
- Heat a frying pan with grape seed oil over medium-high heat.
- Once the oil is hot, carefully add the eggplant to the pan. Fry for a couple of minutes on each side until it turns golden brown.
- Using a strainer, remove the eggplant from the pan and place it on a paper towel to remove excess oil.
- Next, add the green pepper to the pan and fry it until it softens. Remove it from the pan and place it on a paper towel.
- Drain most of the oil from the pan, leaving only a couple of drops.
- Add the garlic to the pan and fry it for a minute until fragrant. Then, add the white vinegar and stir.
- Add the eggplant, green pepper, and tomatoes to the pan with the garlic and vinegar. Stir everything together and cook for a couple more minutes.
- Serve warm as a salad, dip, or with rice. Enjoy!
