The word shakshuka usually refers to a Middle Eastern / North African egg dish, but in Turkey, shakshuka or as we call it "şakşuka" is a vegan meze dish cooked in olive oil and usually served with drinks and made with eggplants.
This is one of the easiest and but surprisingly delicious meze dishes and the ingredients may vary from region to region, but eggplant is usually the main vegetable. In some regions it is made with green tomatoes and some versions includes potatos or zucchinis.
Possibly one of the most popular mezes in Turkey, şakşuka being a appetizer, it can also be enjoyed as an incredibly delicious vegan meal on its own.

Ingredients:
• 3 eggplants, peeled in strips and diced
• 5 green chilies, roughly chopped
• 4 cups frying oil
• 3 medium size tomatoes, finely grated (400 ml (1+ ¾ cups) of tomato puree would do great)
• 3 tablespoons olive oil
• 5 garlic cloves, chopped
• 2 tsp salt
• 1 tsp black pepper
• 1 tbsp white wine vinegar
• 1 tsp sugar
To garnish
• 2 sprigs of parsley, chopped

I was in Turkey in July this year. First time there. Loved the food. It is so good. Fresh produce and fresh fruit off the trees there. My body loved the food there. I could actually quite happily live in the turkish diet. My immune system seem to love it and we had beef donnor on a plate and oh my this old man cooked the beef so brilliantly it was mouth watering. My finger nails actually grew in Turkey. Strange I know but I don't know why they did. At home they never grow. Always break and not good. They still long now. And it strange for me. I need to go back to turkey. I really miss it and the people and the great good tasting food

Yes . I went to Turkey around 9 years ago . Only because I couldn't get a flight to Crete. ! I didn't think I would like it ! But....wow !...I was totally wrong. ! Food , people , Culture , History ... All amazing . And not expensive ! It's a huge country : from G reek Border to Iranian Border and to Armenia in the East. You need months to explore ...!

That is how u could do it. I would love to go to the north turkey as I saw a vlogg of a family there m it looked lovely. Too many places I want to visit in Turkey. Would like a few months there but then if I did that I wouldn't want to go home. Where did u go in Turkey. And where did u visit.

In Turkey, when we have stomach problems, we eat soup made from the stomach of farm animals, and for joint problems, we eat soup made from sheep or cow feet. In fact, most diseases occur because we do not eat certain foods or because we consume too much of a food. When I have a cold in the winter and I don't feel well, I eat chicken soup with lots of garlic and I get better instantly. When you eat or do not eat the necessary food, you will get rid of that problem, but modern medicine does not deal with these.

Hola buenas tardes desde Andalucía Hace poco que sigo sus videos, me parecen que sus platos están deliciosos, todos los que he visto tienen buena pinta. En mi casa se hace un plato muy parecido le llamamos PİSTO, se hace con berengenas pimiento verde, rojo, calabacín y tomate, es una comida que se hacía en verano cuando se daban todas esas verduras sobre todo los tomates rojos maduros muy jugosos y dulces, pero por aquí solo cocinamos con aceite de oliva virgen extra porque esta zona de Andalucía es olivarera Muchas gracias por compartir sus recetas supongo que es usted de Turquía, agradezco que haga platos de varias zonas de su país así.conocermos mejor la amplia gastronomía turca Un cordial saludo

This looks great! What kind of chili peppers are you using? There are so many varieties with a huge variation in Scoville heat units. Do you know what the Scoville units are for the chili pepper variety you are using? Thanks!

It's a mild Turkish variety very similar to padron peppers. The scoville rating should be 500 - 2500. If you want a little bit heat, you can also use jalapeno peppers.

@@Rikki-lh2mw Tomatoes have their origins in Latin America. In those days there were no tomatoes on this side of the water. In 1550 Spanish brought tomato seeds to Europe. And around 1600 they learned how to cultivate them properly. So Ottomans before 1600 never saw one tomato.

You can oven bake them with a bit of oil coated on the pieces.
