My mom used to make fried rice with hot dogs. There were a lot of us and I think she did it to stretch the budget. We loved it. I started craving it after my kids were between 3 and 12. I made the rice the night before and on the way home thought, whew this will be fast. Got home and the day care person had given the hot dogs to my youngest kids for lunch. I went searching through my pantry and had almost settled on spam for that rice. Then I remembered I had some bacon in the fridge. Diced that up and tossed it in the wok. Added some veggie and the rice, soy sauce. My oldest is nearing 40 and if I say I'm making bacon fried rice he's here. It was so good.

Neil! You my friend are reliving my childhood! My grandfather raised hogs. There was a bonefide smoke house on the farm. The pork belly was smoked before becoming bacon...Grandma would go to the smoke house and slice off enough of the bottom of someone's pork belly calling it "the cost of doing business" to make bacon for the morning breakfast. Hand sliced on the counter next to the wood fired stove. Brings back so many memories. FYI, I grew up thinking that what we now call "Pork Shoulder" was ham because the ham (from the back leg of the hog) was more valuable to sell than the front leg shoulder (what we now call the "Pork Shoulder"). I still at 67 prefer the smoked pork shoulder to that of the ham from the back leg of the hog. Once I introduced my current wife (courtesy of an Amish restaurant in Indiana, we will smoke a pork shoulder a few times a year on the Weber kettle set up as a smoker. Man, thanks for the memories!!! BTW, you've just made the best bacon that you can cook! Slice it, fry it and enjoy breakfast!!!

Another awesome recipe. Have learned so much from you. Bought my Traeger Flatrock in large part because of your review and use. And I love it. It looks like you are using homemade handle hole covers that first appear at 06:57. Very cool. Are those rolled steel or a couple of those cheap scrapers made out of one piece of metal? How are they working out. Could you put a couple of magnets on the back to pull them tighter to the griddle?

Looks delicious! When I was a kid, I refused to eat any kind of fried rice because I was convinced the bean sprouts were worms. Once I was married, the wife encouraged me to try it again.

Try adding some Indonesian medium sweet soy sauce to the fried rice you made. I like it on my fried rice. I also like the bean sprouts, and some times fine slivers of sliced water chestnuts.

Looks very delicious. Regarding maybe adding a sauce, try a Babi Pangang sauce (sauce for Roasted Pork). My spouse LOVES it. We can highly recommend. Look into it.

Something you should try that I really liked: Curry Fried Rice. Use the same soy sauce and mirin, but mix in 2-4 teaspoons curry seasoning in. you can use whatever curry you like the best. maybe add some extra spices based on your preference. pour it in the rice as you griddle it and it will turn the rice a nice color and taste amazing.

I just made your chicken fried rice 2.0 yesterday minus the peas. We like to add water chestnuts. I add garlic and pepper garlic to the butter well. Ya'll are correct - that's the secret ingredient.

Hey neighbor...I typical use 1tablespoon to 1 cup cooked rice...I also add same amount of oyster sauce...like anything in cooking...start with less because you could always add later..also make sure you are really fluffing the rice as you pour ....dont let it just sit.....get it distributed in evenly....

If you'd like to try another ingredient, try fish sauce. Three Crabs brand was recommended by Joe Yim, and I've added it to so many things ever since. 👍😊

I’d like to try this with a Char Siu type sauce. Probably cut the pork belly chunks a bit smaller, so the sauce to pork ratio is higher on each bite of pork. Thanks for the idea. Unfortunately my Costco is run by idiots and they have the most useless pork belly possible where it’s precut into about 3/8” thick strips so you can’t smoke it like you did like that.

If you want a little more "pop", next time try adding some rice wine vinegar or Chinese black vinegar, and some soy sauce.
