I told the Chinese lady running the restaurant it was a "High 5" cat because it's arm could swing back and forth after lightly fist bumping or high fiving it. Crispy rice is also something that absorbs the flavouring, this is not how it is usually made, it is put in the bottom of a pan so the seasoning from the top of the rice seeps down to to the bottom, it gives a lot of flavour. edit, the crispy rice name written in Farsi (or Persian as nick calls it ) literally translates to bottom of pan, spelt " tahdig "

Man, I'm actually surprised at how good his rice looked. Also holy shit, mixing tahdig into fried rice is a pro move, I love tahdig so so much. tahdig also has a bunch of flavor, it requires salted butter or margarine - so it comes out crispy, buttery/salty. Agreed! I’m actually really upset that Uncle Roger insulted the tahdig and called it flavorless. Let’s call out the mayonnaise for their unseasoned foods all day long, but that tahdig was cooked in pork fat, and the Maillard reaction alone creates caramelization and deep flavor. Not cool to shit on Persian cuisine, Uncle Roger, especially something like tahdig that can take a lifetime to master.
