Crispy rice is also something that absorbs the flavouring, this is not how it is usually made, it is put in the bottom of a pan so the seasoning from the top of the rice seeps down to to the bottom, it gives a lot of flavour. edit, the crispy rice name written in Farsi (or Persian as nick calls it ) literally translates to bottom of pan, spelt " tahdig "

Don’t directly use the wok that you just buy, cuz the wok haven’t “quench” yet I wasn’t sure it should be call quench or not, first of all you need to clean it properly and then dry it use the fire heat up the wok until it turned blue,make sure the wok all the way turn blue, don’t over heat it if the wok you heat it until red you fked up only can buy a new one, and then coat wok inside it with pork fat oil, or you can just use small piece pork belly meat rob around and then get some green leaf vegetables like leaf lettuce asparagus lettuce rob it around inside of the wok so it coat with animal oil and vegetables oil,after that wait for the wok not that hot completely rinse it wash it, after that your wok will become a none stick wok, if you find out that was too difficult just bring the wok to an Chinese restaurant ask them if they can help you with it, not just the wok become none stick also keep the wok in a good condition for long time. And last tip always wipe it dry after you wash it or use it just in case the wet spot become rust. #NICEWOKMATTERS

There is a cat similar to yours at one of my favorite Chinese restaurants. I told the Chinese lady running the restaurant it was a "High 5" cat because it's arm could swing back and forth after lightly fist bumping or high fiving it. Either she's really polite or genuinely amused. Either way I tip about 20 to 25% because the food and service is so good.

The cat is actually part of Chinese culture! It's called a Zhao Cai Mao (招财猫) in Mandarin, meaning "cat who beckons luck" so it's really common to see in lots of Chinese restaurants. The waving arm is the cat "ushering" in good luck to everyone around it!

Man, I'm actually surprised at how good his rice looked. Also holy shit, mixing tahdig into fried rice is a pro move, I love tahdig so so much. tahdig also has a bunch of flavor, it requires salted butter or margarine - so it comes out crispy, buttery/salty. I can imagine it didn't take away from the goodness of the fried rice, only added to it.

Agreed! I’m actually really upset that Uncle Roger insulted the tahdig and called it flavorless. Let’s call out the mayonnaise for their unseasoned foods all day long, but that tahdig was cooked in pork fat, and the Maillard reaction alone creates caramelization and deep flavor. Not cool to shit on Persian cuisine, Uncle Roger, especially something like tahdig that can take a lifetime to master.
