麪豉雞球脆麪
材料:
急凍雞扒1塊
全蛋麪餅4個
三色椒適量
辣椒仔2隻
黃豆醬2湯匙
蒜蓉1湯匙
處理:
1. 雞扒,清水解凍。
2. 雞扒解凍後,倒去水分,加入粗鹽1茶匙,乸5分鐘,去除雪味、腥味,及加入少許鹹味。
3. 雞扒,清水沖洗乾淨,擎乾水,廚紙索乾。
4. 預備醬汁:
a. 生粉1湯匙
b. 糖1湯匙
c. 生抽1湯匙
d. 胡椒粉適量
加入清水200毫升,攪勻。
5. 雞扒,切一舊舊。
6. 雞球,加入調味料:
a. 生粉1湯匙
b. 生抽1湯匙
c. 胡椒粉適量
撈勻。
7. 三色椒,切細塊。
8. 辣椒仔,切粒。
烹調:
1. 大火煲滾1鑊水。
2. 加入全蛋麪,煮至軟身,擎乾水,清水沖洗乾淨,擎乾水。
3. 大火在鑊內燒熱油3湯匙。
4. 加入蛋麪,轉中慢火,慢慢烘脆。
5. 麪餅,一面已煎至金黃色,反轉繼續煎。
6. 轉大火,麪餅煎至金黃色。
7. 熄火,放麪餅上碟。
8. 大火在鑊內燒熱油1湯匙。
9. 加入適量雞肉煎香。
10. 雞球,一面已煎至金黃色,反轉繼續煎約1分鐘。
11. 轉中慢火,加入蒜蓉,轉慢火煎1分鐘。
12. 轉大火,炒勻,加入辣椒粒。
13. 加入黃豆醬,炒勻。
14. 加入三色椒,炒勻。
15. 醬汁,逐少逐少加入,煮至稠厚。
16. 雞球,放在麪餅上。
17. 完成,可享用。

Chicken crispy noodles with soybean sauce
Ingredients:
Frozen chicken steak 1 No.
Eggs noodles 4 Nos.
Tri-colour bell peppers appropriate amount
Chili 2 Nos.
Soybean sauce 2 tbsp
Garlic sauce 1 tbsp
Preparation:
1. The chicken, defrost in tap water.
2. The chicken, pour away water after defrost. Add in 1 tsp of cooking salt, season for 5 minutes to remove unpleasant smells and add some salty tastes to it.
3. The chicken, rinse thoroughly. Drain. Dry with kitchen towels.
4. Prepare sauce:
a. Tapioca starch 1 tbsp
b. Sugar 1 tbsp
c. Light soya sauce 1 tbsp
d. Pepper appropriate amount
Add in 200ml of water, mix well.
5. The chicken, cut in pieces.
6. The chicken, add seasoning:
a. Tapioca starch 1 tbsp
b. Light soya sauce 1 tbsp
c. Pepper appropriate amount
Mix well.
7. The bell peppers, cut in pieces.
8. The chili, dice in cubes.
Steps:
1. Heat up a wok of water at high flame.
2. Put the noodles and boil them until they turn soft. Drain. Rinse thoroughly. Drain.
3. Heat up 3 tbsp of oil at high flame in wok.
4. Add in the noodles. Turn to medium-low flame. Fry until they turn crispy.
5. The noodles, one side has been fried into golden yellow, flip over and continue frying.
6. Turn to high high flame. Fry the noodles into the colour of deep golden yellow.
7. Turn off fire. Put the noodles on plate.
8. Heat up 1 tbsp of oil at high flame in wok.
9. Add in appropriate amount of the chicken, fry well.
10. The chicken, one side has been fried into golden yellow, flip over and continue frying for a minute.
11. Turn to medium-low flame. Add in garlic sauce. Turn to low flame and fry for a minute.
12. Turn to high flame, fry well. Add in chili cubes.
13. Add in soybean sauce, fry well.
14. Add in the bell peppers, fry well.
15. The sauce, add in little by little, cook until it turns thick.
16. The chicken, put on top of the noodles.
17. Complete. Serve.
