Back bones and rib pieces... MERCY! My Father used to pressure cook those for a weekend breakfast. With fresh biscuits, homemade blackberry jelly, and a hot cup of coffee... that "Eating High on the Hog".

Whenever I’m at second hand stores and garage sales I always look for for older kitchen utensils and I especially love the older wooden handles too!!

It truly fascinates me to watch all the things you all do. When I was raising my three girls I would can anything I could get. It always gave me a good feeling to know how much my family would enjoy the work I had done. Happy New Year to you all.

Wow Andy and Meagan, that is some amazing looking Pork ! I love watching the progressing you all do and it is a reminder of when I was growing up in Illinois and we killed Hogs, goats and chickens ! I love the education you both bring to us ! And seeing the kids join in is so wonderful ! We also helped and enjoyed it , they made us a sausage grinder on a bicycle pedal somehow and we fought over who got to pedal !! Not realizing we were actually working grinding sausage !! Lol. Keep up the great videos! My first video was of Meagan processing chicken on her own ! And I’ve been hooked ever since !! I just love your family !! Blessings to you all !

My grandparents raised me. And they also had hogs. We are from Roan Mountain Tennessee. My grandpa told me that they used to turn the hogs loose in the fall when the chestnuts were falling they would eat them. and really made the meat good. But the chestnut trees died out from a blight. He said it was hard on the folks because they didn't have to feed them for a few months. It's saved them a little money for other things. It was hard living in the mountains. What your doing really brings back memories. My grandma would make that crackling cornbread. Batman a pot of soup beans and an onion would make a meal. Keep up what you are doing I really enjoy your videos God bless.

My grandparents always soaked their salt cured, smoked hams in water, prior to cooking. They would switch out the water several times to take the excess salt off the meat.

Yep!!! That's how my grandma taught up to do to. All ways soak your salted meat the night before, and change your water few times during your soaking. She would tell us. Lord how I miss that woman.

Those packages were awesome and that "smoked honey glazed ham" was really great and I'm sure it went over well at the feast on Christmas. When my great grandmother killed a hog she used every part even the head she would make souse meat my daddy love it.🎊🎉🎊🎉❤️

When I grew up on a farm, we butchered our own chickens, hogs, and cattle. I'm sure my mom would have loved to have a seal-a-meal back then. We wrapped everything in plastic and then in white paper. Mom would label every single package.

In New Zealand we would call those pork bones. Chuck in a pot, gently boil them for a couple of hours, add some potatoes and greens (watercress) , dough boy's ( dumplings) and your done.

i don,t process pigs myself, but those loin slices, i eat daily, pan fried, this is amazing, wish mine was homegrown, you both are amazing at what you do xx

Hey yall, those backbones are also great to smoke, then vacuum seal, freeze and use in greens or beans for your flavoring meat.

I just love using my seal-a-meal vacuum sealer. I buy mostly everything in bulk and repackage it to the way I'll use it. I'm 71 years old and live alone. I live on my Social Security retirement check. I've found out that it goes much farther by getting things in bulk. I've had my seal-a-meal for over 20 years. I got my daughter one about 5 years ago.

It’s so satisfying to raise and preserve your own food, or food purchased from local fellow farmers. I just purchased a lot of chicken from a local farm in case farms (small & large) are forced to cull flocks.

I buy my bags for my seal-a-meal in quart and gallon size rolls. This way I can cut them to the length that I need for what I'm putting in them.

An electric turkey roaster is a great way to render lard, too, especially if you have a lot of fat to do. Also, if you lay a book flat in front of your vacuum sealer, you won't have to hold the bag.

Bravo Meagan. You outdid yourself with that shoulder and I bet it is delicious. That tenderloin looks great. It don't need anything but some homemade biscuits to put it in after frying. Those backbones remind me of Mama. She used to cook them years ago. Y'all have a good weekend!😊

Boiled backbone all it needs is salt and a few pod of dried cayenne peppers some good crispy cornbread cold glass of milk I am very happy. Yalls videos are good just found it a few months back

We would make a “meat painter” out of clean thin rags, made a ball out of them and just tied it off where it wouldn’t fall apart. You can brush over that meat a lot quicker and get that smoker or grill shut off quicker.

Megan, if you can find a large electric roaster oven, it makes rendering lard a breeze.

Megan take that cutting board from Andy and use that in front of your sealer so you do not have to keep picking the pack up to seal it. Also I use the pork loin to make my cubed pork steak and it is so good. Very nice looking pork yall have.

Meagan, you sure did a days work and a half and that jam looked so delicious i love ham heck i love the whole hog lol . How was it the next day?? Meagan qi think you deserve a good rest you looked plum wore out you deserve to sit down and put your feet up and just enjoy yourself a few hours at least. Grandma used to make neck bones and rice after they killed hogs . Talk about a cold weather comfort food. The bone added a much richer flavor to the meat in my opinion.

I love all your videos. When I'm vacuum sealing a lot like you do, I put a cutting board in front of my vacuum sealer so I don't have to hold the bag up. I hope it helps. Happy New Year. I am praying for you and your family to have a wonderful year.

If you dont mind looking at them, a couple pieces of patty paper works really well to use as a cheap boneguard, to prevent the bones from popping through the bags

My daddy would boil backbones with liver and lites with dried hot pods of pepper. When tenderloin is cooked it has a whitish tint. Wish I had some fresh cracklins to snack on and make some cornbread. Stores around here tried to sell cracklins with the skin attached, trying to break someone’s teeth.😂
