Great job Dad! All that patience will pay off some day for Jacob when he's the Daddy! Nice to hear Meagan praise Maggie for doing a good job with the animals. If love and attention is the formula for raising children, you two have mastered the equation! Stay warm--we're chillin' in Arkansas in the snow! God bless!

I can’t swear to it but I think those back marker lights are supposed to be red. The front and center are the only amber ones on the side of a trailer. The only amber lights allowed on the back are the turn signal. The 3 ID lights are amber to the front and red to the rear.

Yes I got a good commercial meat slicer too from my specialty coffee house I used to hold and yes restaurant stuff goes to real cheap you just got to watch out for auctions basically restaurant stuff sells for $0.05 on the dollar I think my big stand up doubled through a freezer sold in the auction for like $200 and it was worth thousands of dollars so you just got to find your place with a got an option for restaurant stuff the only thing about these meat slicers are you gotta have a good spot to leave it because they're very heavy they're not like the little countertop meat slicers they're heavy my dad used to have a little tiny meat slicer sometimes I wish I had one of my kids because at least you could take it out put it on the counter slice what you want and put it back the big one is not so portable

I love the color of the meat that you guys produce. I especially love the color of the fat on your chickens and on your hogs reminds me of when I was growing up. Grocery store chicken used to have yellow fat it's all white now. Grocery store pork fat has no flavor, heirloom or home raised hogs definitely have better fat and flavor from all the TLC that you give them. I got a chunk of fat from someone that was processing one of the Hungarian high fat breeds of pork. I could not believe the thickness of the fat under the skin. I asked and he gave me a chunk of the pork fat and I took it home and rendered it oh boy.

One little thing i discovered using one of those smokers is when I smoke, I only leave the racks in during smoking that have meat on them. I take the extra racks out not being used, and I only have to clean the ones being used. That saved me a lot of clean up. And also, I call the piece of meat you are smoking pork loin. I know a lot of people do it call it tenderloin, but there is a small piece of meat on one end of the loin that is filet or tenderloin. There is a small piece of each side about 10 inches long and about 2 in in diameter. Most people don't know this, but I am just explaining the piece of meat. I grew up myself thinking the loin is all tenderloin. When I stated working in around the grocery stores, I learned the difference.
