Simply wash them and soak them overnight in baking soda. Rinse and pile it un the clean jar. Cut one up and squeeze some juice in the water, pack it in and fill with filtered water. Its kept for up to two years. No salt, just fresh lemon rind water to drink daily. Its a great curative for gut health and it lasts. Just add back the water you drink daily. Drink the little bits from the open lemon and use the open one for tea or juice. Then you can open up another one. Squeeze some juice. Rinse and add it back to the jar for more lemon flavored water. Its the freshest water on a hot day. Lemon rind water is great for your health. A great Thirst quencher!!😊

How much baking soda do you use to wash your lemons? Do you let the lemons sit in this bath on your counter over night then rinse and pack into jar with filtered water?

@@connieshaffer4381 I just rub it between my hands with ba.soda and rinse it off. Let it sit in water An hour or over night. Rinse again and add filtered water for drinking. Refrigerate.

That’s a lot of fridge space for the average family. I love keeping lemons for cooking etc. My technique: First I zest about 10 lemons. I then freeze-dry the zest. You can also dehydrate the zest with a household dehydrator. We use the zest in cooking or to make our own lemon pepper. Then, Using a citrus press I squeeze the 10 lemons and freeze the juice in ice trays. Then transfer the lemon ice cubes into a zip lock for use throughout the year. It may be more work at the front end but it certainly makes for easier storage.

I prefer to use the way that works when the power's out. Don't need to lose more food in an emergency. But that's why we bought a house with a cold crawl space. Dehydrated zests are a cool idea though.

Jars are super expensive especially 1/2 gal and 1 gal sizes that I like to use for some of my fermenting. Here the 1 gallon jars costs about 35 to 38 dollars each. However ... I can buy 1 gallon jars of store brand/off brand commercial pickles from one of our two local stores really CHEAP (less than 6 dollars). Although I don't like to waste food, I have to toss their very nasty tasting pickles and brine 🤢🤮 (if I start to feel guilty all I have to do is taste one and the guilt completely disappears) and I keep the jars and lids for my fermenting.

I bought a bag of lemons at costco for $6.00. I have an electric citrus juicer so I juiced & strained them. Into a ziploc & froze it flat. I easily shave away what I need for cooking etc from the frozen block which takes a fraction of the space (& work) of preserved whole lemons. It always tastes exactly like fresh squeezed & it is very easy to draw from. Did this with limes after throwing away 1 too many dried out ones. Fast/easy/minimal space in freezer.

I use ice cube trays, freeze it in trays and then put them in ziplock freezer bags. It is easy to use.

O my gosh! I love this video, thank you! I also have your book Everything Worth Preserving but a video is awesome too. I got a baby lemon tree, really a 1.5' bush and it now has 45 lemons growing and 20 More blooms and still blooming!!!!!!! We will be needing this, lol!

You're probably going to want to eliminate some of the fruits so you get good fruit from what you do allow to mature. That's way too much fruit for a tree that size to support without the fruit and the tree taking a hit.

where did you get your bush and how long did it take to grow lemons? Im zone 5b and got lemons after 5 years :( I put it outside in summer and bring it in for winter. What kind of tree? Mine was meyers but got 6 ft before it gave me lemons. Then it got white bugs and died :(

If you are looking for fresh lemon juice, squeezing the lemons and freezing the juice in cubes (I use an ice cube tray) and wrapping the cubes and putting them in a silicone freezer bag uses up less actual fridge/freezer space, and lasts up to 6 months. I buy lemons on sale, and do this for all of my cooking as it tastes exactly like fresh lemon juice. Super fast and convenient. You can also water bath can lemon juice - only needs 5 minutes of processing time, to have a chemical free lemon juice for baking and canning, and is shelf stable.

The peels can be dehydrated then ground into lemon powder, which can also be used for lemonade.

Does it not get bitter when canned? Citrus always seem to get bitter if not frozen

You don't need salt, or to cut them open. I have some in my fridge going on almost 2 years and they look brand new. All I did was clean them, put them in a jar, and the upside-down top of a plastic bottle to keep them below the water level. For people saying, "That's a lot of fridge space!" the survivalist way of doing this would be to dig/drill a giant hole in your basement with a cap. Then lower them down into it with a bucket filled with cold water. They will last well over a year.

I suggest you date your jars. You can just put a piece of tape on the jar and write on the tape the date you preserved the lemons. I thank you for the lesson. I've always wanted to know how lemons are preserved.

I’ve been placing my store bought lemons in glass jars under water and then into the fridge for awhile now and I can’t believe how much longer they last! Just started with avocado and that was amazing too!

Yes I do that with avocados and it’s amazing not losing them to going bad or over ripe they stay the same! I love it. Now I buy lemons by the bag and they go bad before I use them all so now I will save my lemons and not lose any. Also I keep h my arms of all kinds. I just can’t throw them away there are so many things to use them for! It’s growing now!

Avocados don't even need to go in water; if you just keep em in the fridge their ripening slows down drastically. Let them get most the way ripe then put them in the fridge to stop the process. Then they don't all get ripe and need to be used in one day lol.

I know another method; 🌞put the each lemon in a plactic bag, close it very tightly and put it into a fridge. I've tired it, still after 6 months they are all ok. It's a simple way to keep them fresh for a long time.

Great! I resisted doing the wedge method just because of the saltiness; so glad you tried this. Doing this today! Also made my first recipe out of your book, the pulled pork yesterday. All jars sealed. Can't wait to crack one open; maybe on my next sour dough baking day I'll make nice hamburger buns to put in on.

I love this idea just to keep them from going bad on my countertop. Yes i can go buy some if i need them, but this is a great way to keep from needless waste! I always buy more than I need and it's so nice just to have them on hand always 🙂

I grow some lemon trees (in pots and they come in during the winter) and this is the second time I’ve done this. My first batch of Meyer Lemons will be a year old in March 2024, and my second batch are New Zealand Lemonade lemons. I’m so thankful to have found this method of preservation!

… I LOVE the “Moroccan “ style salty fermented lemons ! … they are fantastic in slow cooker chicken recipes and recipes like fresh seafood salad … BUT, I will definitely be putting up some whole lemons now as well as limes ! … thanks …

I love Redmond salt as well it's all I use . I tossed all the white bleached salt and made the switch. I made a watermelon electrolyte drink in a gallon jar and that salt has the best flavor plus all the minerals that are taken out of white salt . I like your channel I just stumbled onto it . Good information, because I love lemons 🍋. Thank you for all the great help

Perfect for making home-made mayo! I have chickens and store up avocado oil, but the lemon juice is always a concern since we can't get beautiful quality organic lemons year round here in central Kentucky. Thank you for this!

Get a miniature lemon tree, they arent that big, you can even keep it indoors so it doesnt freeze in cold outdoors.

Very informative video! For North African and South Asian savory dishes, like lemon and olive chicken tajine, the traditional cut method is standard because you usually only use the rind (after scraping out the pulp), rinsed and cut into small strips. It retains the perfect amount of salt and lemon flavor. Some people will use the pulp as well, it depends on the dish. I spent some time in Morocco in the '70s, fell in love with the cuisine and have been cooking it regularly ever since. I don't bake often, but I will definitely utilize your non-cut method here for a batch so that I'll have some stored for out of season. (Who wants to pay $3 per lemon?!)

Tried her method and Love it. My lemons are still good after a year. Of course they are refrigerated and they have a little of the salty brine now, but I really like the flavor and I'm still enjoying lemons. OH and I love eating the peel with that tangy salty taste. Nice!

Oh my word!!!! Thank you,Thank you,Thank you!!!!!! I have been trying to figure a way to preserve lemons without all that salt. I don’t particularly care for that much salt on a lemon and like you said you can’t really use it for any kind of sweets. Oh I’m so glad I will start this immediately. I will go to the store tomorrow and get lemons. Thank you again I am so happy. I probably will do maybe a couple of them in a small jar and leave them for over a year and see how long I can keep going with them. I’m so excited.😂

I grow some over-achieving Meyer lemon plants in pots that produce a plethora of fruit that can’t all be used quickly, so I will give this a try with my next harvest! Thanks for doing the experiment with whole lemons and the video!

I never wanted to do this bc you usually can only use the skins and it wastes most of the lemon. this is much better. I love lemons and I don't want to waste half of the lemon. I want the pulp and the juice. I will try this ASAP. amazing

Thank you for teaching me how to do this. In my country (NZ) lemons can cost up to $20 a kilo in the off season opposed to about $4 in season. I get constant kidney stones (I won't bore you with my health history but to say that I've lived 10 years longer than the two years my lifelong specialists predicted when I was only 32) because having surgery is now a death sentence I treat it with lemon juice so I have it everyday in water in just pure juice. During the off season I use both the juice that I freeze and a supermarket pure lemon juice product because it's the cheapest way. I also dehydrate the lemon peel in my dehydrator which is perfect for baking.

That is so expensive! I live in California USA. My mom has a lemon tree that gives almost year round except for when it goes into this regenerating stage for a short time and then its on again. Your health of kidney if it’s due to creatinine, Take moringa (drumstick leaves) every day. My cousin’s hubby had kidney problem after taking prolonged drugs for diabetes, his creatinine level dropped after taking moringa. Our pharma (organic) produce 300 mg moringa tablets. He takes 1 tablet twice daily.

@Wendy Hla hi, my health is quite complex with various illnesses, complications and contradictions so it all needs to be taken into account when having either natural or chemical. Someone else on here has also suggested Moringa however my creatinine levels are where they they are meant to be. I really appreciate you trying to help. 😊

That’s a Moroccan staple. Not only it’s a technique to use lemon but also it gives the lemons a différents food profile. Since some receipes are better with preserved lemon and people will use them even if they have fresh lemon in the fridge

I dehydrate fresh juice then powder for space saving. I use the pulp too. The pith or white part of the rind is bitter so leave it out.

One thing you didn't mention that would seem logical to me would be upon removing lemons from the jar, you would need to add additional brine to keep the others in the jar fully submerged? Also, have you tried this with other citrus such as regular limes, key limes, tangerines, grapefruit or oranges?

Since I juice my lemons with ginger root with my omega 6 juicer. I put the lemons in zip lock freezer bags in the freezer. When I need to make my lemon / ginger juice. I take out 4 lemons and let them defrost, then juice them with the ginger root

Another thing I do is leave them on the tree as long as possible. I’m pretty sure I left some lemons on the tree for an entire year and the tree just keeps it perfectly preserved. The only thing is when you do finally pick it, it is well ripened and although tastes the same has a much shorter shelf life and needs to be used within a couple days.

I put some lemons I had bought in a large jar and put them in the fridge without water, they kept fresh and didn't dry out at all for about a month and a half. I am going to try for longer to see if it still works.

thank you for this great information.. can you use a couple lemons & replace them with fresh lemons in the same jar/water and if you can do you put the fresh ones in the same water or change the water also? Thank you this is something I havent seen before so need more guidance.

Grey Celtic salt is my favorite. It has more minerals than pink and tastes really good for a salt. I use it for everything.

I have always wanted to do this, but I didn't really want salty lemons. I'm so glad you did this without cutting into them. QUESTION: Can I use a jar with a glass lid that does not tighten or do I need to make sure the lid is secure?

You are the only channel I've seen that stores them in the fridge. I just keep mine in the kitchen on a shelf out of direct sunlight. Some of my jars are lime as well and almost 2 yrs old... they are doing great each time I use some I just cap the jar till next time I need a lemon or lime.

Thank you for saying this! I really don't want to keep them in the fridge. Can I ask a few questions: Do you use all the same ratios of salt/water and leave them whole? Have you tried oranges/grapefruit? If you remove a few, do they start floating above the surface, and is that a problem? I would be so grateful to hear your feedback. :)

Sadly I just opened my 3 jars of limes after 1 month and they all have a nasty amount of mold floating on top. I have no idea why. :(

Great tip. On the Drew Barrymore show they showed just putting the lemons in a big jar with fresh water. They said the lemons would last several weeks. I tried that and it seems to have worked but if I can get even longer with this technique, I'll do it! Thanks for sharing.

I tried that method too, I left the lemons in the fridge in water for about 2 months, but the peels became very mushy, and I wound up throwing them away.

I just wash my lemons with baking soda and water. Dry them and put them in a glass jar with lid and they keep for months in refrigerator!
