I got a 25 lb. prime rib sub primal at the Chef's store for half price once when I was just browsing the meat room with no intention of purchasing anything ; employee there told me his supplier had delivered too many prime ribs, so he put them on sale well before their expiration date; made some delicious cap steaks and rib eyes for the price per pound of chuck the supermarket charges!

@@EffdaBlx a beef carcass has seven (I think) 'primals', shoulder, ribs, rump, flank, shanks, brisket, and plate; most of these are divided into smaller pieces called sub primals; this has nothing to do with the quality of the meat

Not everyone has that option, sadly. Where I live butchers won't sell the BBQ cuts because they sell them directly to restaurants or cook it themselves for a profit.

Chef Store is great! In my city there’s a Chef Store and a Costco Business center that does bulk slabs. Those are my go to places for meat. A 16Lb slab of Rib Eye for $83 was my last purchase from Costco.

I hve a US Chef Store near me, I go there often. You do have to check the rating of the meat (Prime, Choice or Select). Select briskets will be the cheapest but sometimes they are a little too lean for a BBQ brisket (ok for corned beef). Sometimes they have good deals for either NY strip or ribeyes. Some of them have whole lambs in the freezer. They do have the best price for ground lamb (which I've seen in another freezer section, not in the meat room). Their prices for pork are also good. I pick up a 2-pack of shoulder when I'm making sausages.

I used to work at US Foods for a three years (here in Idaho it was called Cash and Carry back then) and can attest that the meat section is amazing and you can find great deals. I still go there for meats and my parents shop there for their restaurant. The store is aimed at restaurants so everything is the best price at bulk. They also have a great frozen section inside the freezers. They are great for bulk spices, sauces (chipotle, mayo, ketchup, soy sauce, etc.) as well as flour, potato's, onions, pretty much anything you'd want in bulk as a restaurant.

Costco sells everything whole outta the meat department all you have to do is ask and buying pieces of meat whole can drop the price 1$ sometimes 4 dollars a pound less and if you have enough space or a business we even sell whole cases of items for cheaper like for example instead of one pack of party wings for 26 bucks at 2.49 a pound you can come ask us and get a 44 pound box for like 100 at 2.29 a pound

I was thinking man that would be a great place to buy bulk meat but there probably isn't one in my city. I look it up and there is one 4 miles from my house! We have nothing like that here so it’s another reason we started raising our own Black Angus calves. We just could not get quality meat regardless of price. So we corn/grass feed on 50 acres & our last 10 month old calf dressed out (HCW), at 475lbs & ran $3.85/lb after the butchering. Our chuck steaks are so tender we just BBQ them. Our ground beef is so lean the wife mixes in ground bacon for the hamburgers. We also raise pigs, but we like them @ about 200lbs.

Wish we had this in my state. Brought back fond memories of the sadly long gone Hilltop Steakhouse Butcher shops. They were better because while packages were large, they weren't restaurant size. And when an item was on sale, you loaded up. Which was great, because there was always some steaks, veal cutlets, etc in my freezer. They sold the same meat and products they used in their restaurants. Boy I miss them!! Closest we have here is Restaurant Depot, which is not open to the public.

Some restaurant supply companies have retail outlets that sell goods in institutional quantities. Ours is Shamrock Foods, I used to buy thousands of dollars worth of supplies back when I was a Chef. However, while you can buy primals, it's not the best that can be found locally, we're lucky to have a supplier that sells locally grown meats that are of higher quality (28 day dry age, 14 day wet, grass fed, grain finish Prime) for not much more than retail sells as Choice.

For the Montreal steak seasoning, just compare the ingredients , grab the missing and the cheaper version and mix in your own. plus you have extra of the original missing , you can add to taste or assume the amount and mix it in the larger container.

Costco near Milwaukee tonight had basically nothing in large packs for me to break down. Their rib roasts were same price as cut boneless ribeyes. Costco's options have really been less and less for us in the past year or two. The only beef options were whole brisket and tenderloin.

They advertise "Wholsale Prices" and that may be true for some things. Mostly the spice aisle and maybe the frozen foods. But, they are more expensive than the local grocery stores here in the Portland, OR area for just about everything else. I bought Hormel brand baby back pork ribs this week at WinCo for $2.58/lb. Chef'Store wanted $3.09/lb for Canadian pork. When it was Cash 'n Carry, they were a great deal. Since the pandemic, prices have doubled on a lot of items. I only go there for Coffee Syrup and certain spices these days.

Wholesale Club is a worthy recommendation for people in Canada looking for something similar to what The Chef's Store offers. It's not quite the same, and sadly... it's operated by Loblaws. But the selection is pretty nice for folk who need more than just what the usual supermarket provides. And they don't charge for a membership like Costco... last I used them at least. But that was a couple years ago almost now.

The Monarch spices are phenomenal. The Monarch Kosher Salt is the best kosher Salt I've found. It beets Diamond and Mortin by miles....if your local store h as it. I had to buy a case. Glad I did. Went back a few months later and they didn't have it

i have a few of them in my city. it doesn't exceed the savings of holiday ribeye prices that are limit 1 or require a minimum purchase, however it is nearly equivalent to costco business centers that would have it. meats however are not labeled by prime, choice, select. you will have to use your own judgement IBP is ungraded.

One more thought, Not all of the Chefs store's are created equal when it comes to the meat departments. For instance, the one in sacramento has a meat department that is twice the size of the one in Yuba city.

Costco Business Centers (not the Costco regular store) carries true bulk items, including a huge refrigerated section that has meats galore; chuck rolls etc. the whole deal, Halal meats too - in distribution packs or full boxes. I shop there once a month

Do you need a business tax number to shop in Costco's business centre? Sadly in Canada, it's a no go unless you're a business owner. It's a certainty that Cdn prices are very high in comparison.

@@karmelicanke Costco membership is valid worldwide and theres Costcos in Canada. You don't need a business tax number to be a member. I'm in Detroit and the Business Center is in Southfield, Michigan - a northern suburb - and I see Ontario license plates in the parking lot all the time.

@@karmelicanke Those that use the business membership with tax numbers are able to buy items for their stores and able to price them individually accordingly. We all pay the same price out the door though. I often buy cases of Evian water. By the case it's about $1.50 per liter bottle. In the grocery store, they sell it for up to $2.79. I like that the Business Center sell things that the regular wholesale stores don't have.

Looking around Maryland there doesn't seem to be much option for shopping for cheap bulk meats beyond Sams, BJs, and Costco (normal). Costco Business and US Chefs are both 200m away. Which would kill the price savings in transport costs alone.
