I learned something new today! I didn’t know you could dry can potatoes, did you use cold or hot water in the jars (the ones you added water to)?

I am curious how long the “dry packed” potatoes are stable on your shelf? How long have you left them?

#amymckellips - the lady @ "grow and preserve" has some from 3 yrs ago.. she says they really like the dry canned potatoes over Water bath😢, so it's hard to keep them on the shelf for a long time.. 😊 She did French Fries, Home Fries, as well as cut Potatoes.

The caner "Should be" Vented for ten mins. Jus sayin. Personally I would like to understand why its so important as I HATE steaming up the house! I dry caned taters last night 18 pints and 7 quarts.

#jayhughart - 1)This allows the steam to build inside the canner and push the air out so that the canner will build pressure properly. 2)Air trapped in a canner lowers the processing temperature and results in under processing of low-acid foods. To be safe, the USDA recommends that all types of pressure canners be vented 10 minutes before they are pressurized. WHY VENT? It is STEAM, not water, that does the processing in a pressure canner.
