One way to push that minestrone even further into deliciousness is to toss a piece of Parmesan rind into it while it's cooking. Since the rind is too hard to grate easily, it's generally a waste product, but this allows some of that lovely umami flavor to infuse the soup. Fish it out once the soup is done, as it's not very tasty to bite into!

Mine broke on the first use… I have gone back to the sturdy steel spoon. I made from from a canning lid… with a nice wooden handle, super easy project. I broke that one too. I might get some better steel, cut with a torch or pound it in a forge (need to build that ) harden it for a truly sturdy tool.

I am loosely following along with the pantry challenge. I don't have a milk cow or chickens for those dairy items. But it is extremely satisfying to cook from scratch a nourishing meal from the pantry preserves, garden produce that has been preserved and the freezer items. I also have freeze dried my herbs and there is no comparison to dehydrated. Nothing like your own food security. :)

For the pesky cough I recommend boiling a mug of water and add a few shakes of Turmeric powder and Fresh cracked black pepper. You can add juice of half fresh lemon stir and sip . You can add honey if you like. I call it Spicy hot lemonade. 2nd, Before bedtime Mince up a clove of qarlic per person then Leave out on the counter for 15 min to develop the medicinal qualities. Then put it into a tiny shot glass ( size), add juice of 1/2 lemon ( no seeds) and 1-2 Tbsp of Olive oil . Then mix and swallow all. This will work all night as you sleep. I have found the the Yogi brand Elderberry Lemonbalm or plan lemonbalm very helpful to calm the sinuses and very relaxing to be able to get restorative sleep. You can add honey to the tea if you like. I also have found the Herbal Berry flavored Zinc Cough drops to help a lot but they ruin your taste buds for tasting food. But good to suck on again before bed and then brush teeth. I caught a wicked head cold a month ago and I took Oregano oil capsules during the day with Emergenc C etc. It worked great in shortening the duraition to 4 days. Hope everyone makes a quick recovery. No Dairy ! as that seems to feed coughs. So skip all Ice cream, cheese, milk and yogurt eating till after everyone is 100%. I love your soups !

I'm new to gardening and canning and I also get super excited when I use what's already on my shelf. Everything that will go into the soup is already canned or freeze-dried in my house. Looking forward to tossing it all together tonight and have it hot and ready when hubby gets off work.

You do the most amazing breads. I so envy your bread making skills. My mom (rest her soul) was an amzing baker. Kudo's, Chelsea on your wonderful cooking from scratch. And your vegetable soup was beautiful. My sister has me make minestrone soup when I travel to visit her. However, to be true Minestrone soup requires little pasta's added to it. I've found adding it into the cooking soup makes it mushy. I love to precook the little salad macaroni, drain and then put in a bowl and dribble garlic infused olive oil over it and stir. Then when someone dishes up their soup, they can add as much or as little macaroni to their soup before eating. This is a huge hit in the family, needless to say ❤

An observation I have is I wonder whether people all around the world have compromised immune systems from the cv 💉. Top epidemiologists did warn and predict that if we mass 💉the world population in a pandemic it could stuff up our immune systems rather than strengthen them. Just thinking out aloud. Had friends and work colleagues constantly sick since the roll out. 😢

Lard is your best bet…while I do love olive oil, I firstly research the brand of olive oil…then use it mainly for low-temp cooking or finishing. I don’t use canola: having been in the restaurant business for so many years, I’ve seen first-hand, the residual left on a griddle using it. Safflower or grape seed oil is better if looking for a neutral oil

Have you ever oven-dried tomatoes? At the restaurant I work at, in the summer the night shift will halve small or “paste” tomatoes and put them in the oven on sheet pans. The lowest oven setting is 125 degrees. The next morning they’re perfect. I’m thinking that it may be possible to dry can these? Haven’t thought it thru, but they’d be great for adding body and flavor to soups Countertops are beautiful, by the way. Much better than the butcher-block look😊
