I made this 2 days in a row, very similar. I’m a home bread baker so my bread is Artisan seeded sourdough, toasted, avocado spread, spring mix drizzled with lemon oil, easy over egg, S&P. So good. It holds me even past lunch.

I just made this for my lunch...and there is only one word for this. Brilliant. I know that it is often overused but I use it judiciously. I realized as I making this that it is similar to the very British breakfast - something 'too much' for me (and also as a German). This was such a quick and perfect version and luckily I had a perfect avocado - but used my low carb keto bread that I make. A perfect, flavourful paring - simplicity and nutrition!
