So this is far past my skill level, but if I wanted to express that I was surprised how much Japanese people eat fish, would I use 「なんて」like this 「日本人はなんて魚をたくさん食べる」? Or would I put 「日本人は魚をたくさんなんてたべる」with なんて being before the verb? I really liked the format of this video. ありがとう、先生。

Sorry but both are incorrect, the syntax is just weird... I would say something like 日本人って魚よく食べるね! To put it simple, なんて〜 it's like saying "what a~" in English. Example: What a great movie! なんて素晴らしい映画なんだ!

WakeEntryさん、いつもありがとう💛 What you wrote is almost correct :) Very good! I would put 日本人はなんてたくさん魚を食べるんだろう!It's better that you put なんて before the adjective and noun and you can add だろう (or だ)at the end of the sentence.
