She said that it was wrong to put oil in the water. that doing that would make the pasta slippery and the sauce would not stick to pasta latter. I did it bc after u drain the water and just let it sit the pasta would stick to each other. Now I rinse it in cold water and leave it in the colander. I don’t throw out the water so later I can warm up the pasta as needed.

We make this in Greece but with fresh tomatoes which have been grated and in slices, too, with the eggs. And without the pasta. It's really yummy served with crunchy, grilled bread.

In Serbia, we make it with eggs, fresh tomatoes and peppers, also without pasta, and you eat it with bread. It's known as sataraš or bećarac. Kajgana (the name similar to the Greek dish) is the word we use for simple scrambled eggs.

Never add oil to the water when making pasta. The sauce or whatever you're adding to the pasta will not stick, it will just slide right off

For some reason they’re using finishing salt for all the things you should be using kosher salt for or normal salt. Finishing salt is for appearance you just put a little on top of the finished product. You don’t actually cook with it

Great Depression,WW2 era...my father boils macaroni, drains, puts pasta back in pan on heat, adds an egg, stir until egg cooked, add black pepper, then eat with ketchup. cheap way to get full and some protein

Nowhere in this video nor its description did the speaker draw any explicit connection to Nigerian cuisine, so people talking negatively about this recipe are most likely speaking from a "that sounds gross to me because it is unfamiliar and very bizarre to me" perspective, not from a "omg that cultural dish is disgusting" perspective. For anyone wondering, pasta alla carbonara is made with egg(s), but you have to be careful as you want to avoid getting scrambled eggs, but you want the mixture of egg and cheese to cream up when you add them to the hot pasta. Not sure I'd want my pasta with scrambled eggs as in the video.

...the amount of oil in the sauce will lube it on the way out, I guess that could be a plus. It sounds like a night of diarrhea. The sauce is oil with the barest amount of seasoning, tomato paste, and 5 tablespoons of fat in it. The pasta and eggs are really the tamest things here.
