I make small batches of sausage with my own equipment, but my dad has been making old-school Swedish potato sausage for about 60years. He has a large antique cast iron grinder and mated it with a 1HP motor. His stuffer is an antique Enterprise cast iron sausage stuffer. Both work extremely well and were handed down by relatives before they passed on. I go over and we usually make about 150 lbs in one day.

Starting out on a Kitchen Aid grinder/stuffer attachment has its pros and cons, and there is a huge con. Pros: pretty inexpensive to get started and does a decent job of grinding the meat, especially with the extension tray. Cons: Very slow, and the biggest negative, the stuffer is completely worthless for getting a good quality fill on the casing. My advice if you're on a budget or not planning on large batches: use the Kitchen Aid for grinding, but invest in a hand crank stuffer like Brad shows. You will have much less discouragement from making sausage. Ideally, and you will spend just about as much, invest in at least the Meat 500w and 5lb stuffer. I've been happy with these two as a lower volume home sausage maker.

I have the LEM stuffer and grinder and also quite pleased with those. I keep my disk for the stuffer out of the cylinder when not in use to not compress the gasket.

Have the Cabelas 1 HP carnivore great grinder and I love the fact it has the cold pack that wraps around the grinder part making the process much more enjoyable.

Great video! I have started making my sausage now. Your tips and tricks have been VALUABLE for sure and got me started in sausage making. As a backyard sausage newb, I started with the kitchen aid mixer with the metal grinder attachment. I’ve had no problem grinding 15 lbs of meat in a relatively short time. That said, it is terrible for stuffing, especially since the casing gets stuffed a good 12 inches off the height of the counter (along with other issues). So, I’d recommend the kitchen aid attachment for grinding but know that you’ll want a separate stuffer.

I hot a small grinder from harbor freight and it's great for a small batch. The largest I've done was 10 lbs of cheap brisket for Ground beef. I like it but one day I want to up grade. I've had it for a year and done about 15 batches

I have a 3/4 HP Lem, an 11/Lb Hakka, and a chard 20/Lb Meat mixer. I'm more than happy with all of it. the 11/Lb Hakka also has the two gears and I agree the two gears is super convenient. The Lem rips through 60 pounds of meat in a FLASH. However, I'd take that grinder ANY day, Lolz.

Yep...Started out with one of those little plastic bodied, aluminium tinny things that was an absolute nightmare...Slow, Noisy, Schmeary and as soon as the "metal" components went into the dishwasher they did the same exact as yours....Hmmm, that ain't going into my snags!!! I've now got a fully stainless #12 Mincer....That is superb (for me), it's quick, easy to use and being stainless all the constituent parts can be frozen down AND chucked in the dishwasher. Next up for me is a dedicated stuffer as I am using the mincer currently, which is fine, but needs someone else to press the "Stop" button as you go. I use a Stand Mixer for my emulsifications....It seems to be working good :) I'd LOVE a Buffalo Chopper, but the F&A Dept. (The Mrs) reckons that's overkill.......

Lot of good information, thanks. I've had a LEM products stuffer and mixer for years, they have always done well for me. My mixer is a 1/2 hp and it's at least 40+ years old it is a beast, have never had anything even slow it down when grinding.

All that stuffer needs is a clutch that you can use to separate the gears from the piston, and then you could just lift the piston up by hand. Maybe put a little loop at the top for grabbing. Fast and easy.

I'm also just starting out, and was given the KitchenAid stand mixer grinder attachment as a gift. From my experience, I can say this: -Fantastic first grinder. Has a good amount of power to cut through all sorts of stuff and variable speeds. Does a great job for almost any type of sausage you want to grind. Extremely happy with this part of it. -Absolutely SUCKS as a stuffer. There's no way of bleeding out air trapped in the main body of the grinder, and that leads to either air bubbles in the sausage or having to ram the meat into the neck with the ramrod to force it through the stuffer, which is impossible to do and control the casing process while working alone. The only way to avoid the air problem is to make sure the stuffer neck is constantly full (which is pretty much impossible). Hated the stuffing mechanism so much I went out and bought Made with Meat's standalone stuffer instead (haven't used it yet, so opinion there tbd) -Ultra obnoxious to clean, made even more difficult by the fact that KitchenAid left a little note in the box saying not to put any of it in the dishwasher. Long, tedious hand-soaping required. -Also, their included cleaning brush feels really flimsy. Needs a thicker spine and more rigid bristles to let me get down into the nooks and crannies without feeling like I'm about to snap the thing in half.

One of my stuffers, a Haka with one crank on the back, if I need to do more than the 10 pounds I take the handle off and connect my 1/2" drill, speedy !

This is why I love Chuds. Simple, down to earth, & to the point. This could've been easily 1hr+ long with any other channel with all the gadgets & feedback but he goes a step further with his honest opinion & experience and can still keep it under 15 minutes. Another homerun video!!! Love it. I have pretty much all the same type equipment...1 3/4 horse Cabela's commercial meat grinder, 20lbs stuffer and 20lbs mixer. They are fantastic for plowing through all batches of meat. My biggest complaint...setup, clean up, and storage.

The Cabella's Carnivore is a workhorse for sure and definitely worth the money 💰 if you're planning on doing a lot of grinding. Worth mentioning that a grinder is awesome for vegetarian food preparation as well. (I know NOT the place to mention vegetarian🤬🤬) but I make relish, salsa, spaghetti sauce.....list is endless. I use mine 2 or 3 times a week. Great 👍 video Bradley 💯👏

@@PickledAndFermented yes, I got the Meat .5HP and love it. I had to spend the money I was saving for the 5lb stuffer on a vet bill, so am still using the grinder as a stuffer. It works, but I’m constantly mad I don’t have the stuffer. As soon as I have a little extra $, I’m buying that stuffer. But to answer you question- yes, absolutely get the grinder, it just plows through whatever I send through it without any struggle or worry on my part

The KitchenAid is great for grinding 5 lbs. of sausage. And obviously it's a great general mixer. You need a separate stuffer.

I started with a cheap kitchen meat grinder after 1 year the plastic grear wore out....after that I found a midway shooters supply grinder which is a lem made for midwest....4 years later still going strong but it does not like ice. then got the amazon 5 lb meat stuffer all works well....now Im thinking of upgrading to the meat brand grinder and mixer....but ill keep the stuffer

Can you fit a socket and electric drill on the stud where the stuffer handle attaches? If so, take the handle off and speed raise it with the drill. That Meat! grinder will be my next purchase from them. I have the Meat! slicer and it is super high quality.

For your made with meat stuffer. What does that end for the handle look like? If you have a battery powered drill, like a DeWalt or Milwaukee, couldn't you find a socket that fits that gear end and just have the drill turn it for you? When you want to raise the plunger

Made with meat has a foot pedal for the grinder. They need to convert the stuffer to let you use the foot pedal instead of the handle to bring down the plunger.

I was thinking the MEAT! Stuffer looked awkward. I have the Hakka stuffer. I like it but do want one with a bigger pot. I do struggle with stuffing solo so I usually get help on that so I can have two hands free. I have been thinking about getting an electric pedal driven stuffer one day. Maybe you can get one and do a review on it? Keep these sausage videos coming. Loving them for sure.

I have the meat! 500watt grinder and the 20lb mixer. Can't complain about either. Even the hand crank will do what you do by hand in 10% of the time. We use it to make dog food about every week and both have dropped production time significantly.... and it gave me an excuse to buy stuff to make hamburgers and sausage

Growing up we processed our own cattle and pigs. Had an old old industrial sized grinder. The pan was just about the size and height of that cutting board assuming you’re 6’ ish. That thing was scary. Saw it eat a hammer handle my grandpa was using as a push stick once. Never did the stuffing thing though. Lots and lots of burger and loose breakfast style sausage though.

I don't mind the kitchen aid for grinding the meat, it's a little slow, but it works fine for me on a small scale. But it really sucks using that for stuffing the sausages. I'm looking for a decent stuffer that won't break the bank, and hopefully is a little smaller in size. I don't have room to store the huge one.

Good video. I bought a Sun brand grinder that looks just like your “option 2” maybe 15 years ago and it finally died yesterday while grinding up some half frozen brisket fat trimmings for some tallow. Fortunately I had already purchased a Cabela’s Carnivore 1hp grinder. My son works for Bass Pro so he was able to get it for 50% off with a little discount boost for Father’s Day.

Another great video Bradley. I have also gone through a similar process over the years of upgrading my equipment. I like the ability of the grinder to power the mixer. That's a big plus as stand mixers (such as Kitchenaid) are great but will only do a 4-5lb batch (at best). It's unfortunate that MEAT doesn't make an electric version. That would be a perfect trifecta of equipment from one manufacturer. Cheers!

Awesome video and sausage making equipment. I always enjoy your sausage and hamburger making videos. Would enjoy seeing you do a video on how you sharpen and keep your knives sharp. I just use a coarse and fine steel and it does the job ok but the edges never last very long. Curious as to your preferred methods for sharpening.
