I think the reason you couldn't get the coconuts at first was the fact you need a foraging level one, as it gives you the ability to shake trees and get stuff

Not sure if someone else mentioned this, but you can't shake anything from tree until you level gathering. Rarely an issue with coconuts, usually you levelled you well before hit the island

for you not getting a coconut from shaking trees, its actually pretty simple, they are considered like seeds in the code, and since you cant get seeds from shaking trees at foraging level 0, you cant get coconuts when shaking trees when level 0! simple!!!!
