There are radio telescopes that are bigger but those are radio only, they can only listen for radio waves from stars and such, where as Arecibo was a radar telescope meaning not only could it detect radio waves from space, it can also send a pulse of radio energy out and measure the time it took to detect the reflection of that pulse making it able to extremely accurately measure the distance between the object and the telescope. On top of that it was able to aim itself without moving its massive built into a mountain dish. When you needed to know the distance between earth and an asteroid headed towards earth, Arecibo was the place to call.

The "sounds" of saturn are wave emissions (radiation, light, microwaves, infrared, turbulence, etc.) transfered into sound. Since this emissions have a wave form you can "translate" that into soundwaves with an audio program.
