Chinese food is not suitable for Michelin standards. If we Chinese people still refer to Michelin when eating Chinese food, we will be laughed at. By the way, the food in most Michelin recommended restaurants is not the best or even not very delicious.

5:03 that's sugar not salt, it's called "炒糖色" (fried sugar color) in Chinese, it's basically a caramelization reaction. often used in braised dishes. It's for the color and gloss of the dishes, also gives the food a unique flavor and aroma. It can be carried out using oil or water. Oil conducts heat quickly but is easy to burnt, while water conducts heat slowly but is stable.
The quallity of natural collagen from the rooster... 10/10 everything looks so natural, fresh, made from scratch. Just the way food is supposed to be!

Thank you mark for beeing in china i love to watch chinese food videos because the food is like you say the best. Even in japan they use szechuan pepper because its amazing. When it comes to asian food for me nothing can beat chinese food , when it comes to arab food nothing can beat lebanese food , when it comes to latinamerican food , nothing can beat mexican food , when it comes to south european food nothing can beat italian , greek and spanish food and when it comes to meat dishes nothing can beat turkish food.

The ingredients for these countryside dishes are very fresh. For example, the chickens are raised in the mountains and usually aren't fed with commercial feed. The vegetables grown in the mountains are also better than those found in the city

Actually lots of foreigners don't like to eat Chinese chicken because there are lots of bones inside. their tongue didn't get trained to deal with the bone. they prefer to eat the chicken in KCF. but Chinese people think the meat with bone is more delicious than the pure meat, that's the big difference.

😂😂😂. Iny country, you can get the foreign chicken wich is American, bigger and needs a lot of marinade and 'work' to give it some taste. Out chicken are no ote like the Chinese chickens I suppose. Smaller, a bit tougher but o so tasty.

In China, they are called "农家乐", which means country restaurants or hotels (mostly providing accommodation services), which provide services to people coming from the city. Although they are not professional chefs, but you can taste local specialties here. You can also hang out nearby and experience the natural scenery. Basically, this is a place for people in the city to relax and have fun. You don’t have to drive too far. You only need to go out of the city to the countryside. It is a very short trip and is suitable for tourists. Spend the weekend.

Hi Mark. I note something similar here from your visit to Mauritius. Do you remember when you went to that house to see the young man cooking his biryani? He fried the potatoes first before adding it to the pot then the rice and water. Somehow, I believe the frying is to ensure that the potatoes keep their shape when placed in water to boil. Cool stuff

But from what I can see, this village is already very close to Hanzhong another famous city in Shanxi Province. The first emperor of Han Dynasty - Liubang originated from the place about two thousand years ago. It has some local special food as well. I visited there once and loved it. It will worth the visit.
