Add me to the PORK SHOULDER club!!! Love these!!! A local Tx BBQ pit makes yummy pulled pork, but also uses the shoulders for SUCCULENT pork steaks. DOUBLE use of same chunk of meat. Steaks are fewer and sell out quickly each day. I prefer the pork to the beef, both steaks/brisket and pulled/chopped meats. Both are good, but pork is top in my taste preference.

Welcome to pork steak heaven! I grew up on pork steaks. In St Louis we cook it convection style on the bbq pit and finish it off braised in a vinegar heavy tomato based sauce for tenderness. It’s an actual quisine here!

Gravy too thick for me. I never have had any luck with shoulder steaks. but this is very similar to pork chops (if you have a good butcher for the chops) I eat a very similar dish every week !
