兩餸$44
豆腐三文魚頭湯
紅蘿蔔翠玉瓜炒肉片
材料:
豆腐一磚
三文魚頭半邊
梅頭豬肉一斤
翠玉瓜2個
紅蘿蔔(細)2個
薑一小舊
處理:
1. 三文魚頭,除去內臟,加入粗鹽一茶匙,乸5分鐘,去除雪味及腥味。
2. 翠玉瓜,洗乾淨,切兩端,切絲。
3. 紅蘿蔔,去皮,洗乾淨,切絲,放翠玉瓜旁。
4. 薑,去皮,洗乾淨,一開二,拍鬆,放豆腐旁。
5. 豆腐,一開八。
6. 三文魚頭,清水洗乾淨,擎乾水。
7. 豬肉,洗乾淨,切絲。
烹調:
1. 白鑊,放豬肉在鑊內,中火炒香。
2. 另一邊,預備一隻乾淨的鑊,加入油一湯匙,中火,放三文魚,轉中慢火,半冚蓋,繼續煎。
3. 大火煲滾清水一升。
4. 魚,已煎了2分鐘,加入豆腐及薑,繼續煎。
5. 肉絲已煎至金黃色,炒勻,轉最慢火,加入調味料:
a. 蒜蓉半茶匙
b. 豆瓣醬一茶匙
c. 麪豉醬一茶匙
6. 三文魚頭已煎香,轉大火,加入大滾水,冚蓋,大火滾起。
7. 肉絲,再加入調味料:
a. 鮑魚汁一茶匙
b. 生抽一茶匙
c. 糖一茶匙
轉大火,炒勻,加入翠玉瓜及紅蘿蔔,炒勻,冚蓋,煮2分鐘。
8. 湯已滾好,湯倒入大碗內,材料放碟上。
9. 肉絲已炒好,上碟。
10. 完成,可享用。

Salmon head and tofu soup
Stir frying sliced pork with carrot and zucchini
Ingredients:
Tofu 1 cube
Salmon head half side
Plumhead pork meat 1 catty
Zucchini 2 Nos.
Carrot (small) 2 Nos.
Ginger (small) 1 No.
Preparation:
1. The fish head, remove intestines. Add in 1 tsp of cooking salt, season for 5 minutes, to remove unpleasant smells.
2. Zucchini, rinse with tap water. Cut both ends. Get it shredded.
3. Carrot, get it peeled. Rinse with tap water. Get it shredded. Put it besides the zucchini.
4. Ginger, get it peeled. Rinse with tap water. Divide it into 2 shares. Beat well. Put besides the tofu.
5. Tofu, divide it into 8 shares.
6. The fish head, rinse with tap water. Drain.
7. The pork, rinse with tap water. Get it shredded.
Steps:
1. Plain wok, put pork in it. Fry well at medium flame.
2. On the other side, get ready for a clean wok. Add in 1 tbsp of oil, heat up at medium flame. Put the salmon in the wok. Turn to medium-low flame. Halfly cover up the wok and continue frying.
3. Heat up 1L of water at high flame.
4. The fish, has been fried for 2 minutes, add in tofu and ginger, and continue frying.
5. The pork has been fried into golden yellow, fry well. Turn to the lowest flame. Add seasoning:
a. Garlic sauce 0.5 tsp
b. Chili bean sauce 1 tsp
c. Soybean sauce 1 tsp
6. The salmon has been fried well, turn to high flame. Add in the boiled-up water. Cover up the wok. Heat up at high flame.
7. The pork, add seasoning again:
a. Abalone sauce 1 tsp
b. Light soya sauce 1 tsp
c. Sugar 1 tsp
Turn to high flame, fry well. Add in zucchini and carrot, fry well. Cover up the wok. Cook for 2 minutes.
8. Soup has been cooked well, pour into a big bowl. Put the ingredients on a plate.
9. Pork has been cooked well, put on plate.
10. Complete. Serve.
