May I suggest the Townsends yt channel? Look for mushroon ketchup. The liquid/sauce is amazing and the solids can be dehydrated and ground into a powder that is also amazing. In my very humble opinion

omg this seasoning has taken my seitan to the next level. I cook my seitan in the instant pot, but instead of cooking it in a broth I add the broth and spices to the VWG and it's F ing amazing and so meat like. My 1st vegan Thanksgiving is gonna be off the hook and nobody will miss turkey.

I put in in the broth that I rehydrate butler soy curls, for fried chic'un. Super delish. It is one of my new favorite things. Then when I drain the curls, I use the broth to make gravy. So So good.

So this is the MSG version for the ones that psyched themselves into believing MSG is bad for them? Alright then. The irony is that they should be getting the same effects as MSG from this (or Mushrooms and Algea in general), if they were truly having negative effects from MSG. That being said, its sounds like a good broth to cook Seitan in.

@@Bobsry16 Its more like saying salt gives you headache, and that is why you only use soy sauce to get your food salty. I get its a branding issue for MSG, but people going "i get headaches from using salt, that is why i am using soysauce" is silly. Of course, i am sure we'd have people claim they get all sorts of health issues from using sodium chloride, like toothaches, hair loss and cancer. Fortunately we do know sodium chloride as salt. And that is not a condemnation of the Mushroom seasoning. Just like Soysauce it has its uses. I was commenting on people refusing to use MSG but use this instead, given that this product contains MSG. Its after all why mushrooms (and cheese and a whole host of other food items) have umami.

It was found that in a group of lab rats consumption of MSG caused them to grow tumors at around 2 years into their life.

@@0Tony1 There is no conclusive evidence that it causes cancer in any of the studies. The Western Australian Cancer Council even calls it a "Myth". And as i already said, MSG is part of many food products we consume such as cheese, mushrooms and a plethora of others. The way we "refine" MSG is by fermentation, a fully natural process. Matter of fact, there is more link between salt and cancer than MSG and cancer, and about as much link between as between sugar and cancer. Its a silly scare.

Glutamates are not the only umami components. There's also inosinates and guanylates. Include all three in your dish and the umami flavor is most effective.

As you said though, mushrooms have MSG already, so it's not actually no MSG. You shouldn't be catering to the anti-science people who claim MSG is harmful.

Look - first of all there is no anti-science. Second: most people, who think, that they are based their opinion on science are simply not. There are quite a lot of scientific studies out there. But in todays environment, where studies are "bought and circulated" by multinational companies, I would not be very surprised, if this is also the case for MSG. Think, how long it has been in circulation, that spinach is a superior source for iron and carrots are great for vision (both debunked after decades of misinformation). Three: who has really read any scientific study, not the processed information, what you get in the news and of people who spread opinions??? Scientific studies usually are very careful with giving recommendations or even a black or white result (there would be not a reasonable dietary scientist, who says, that MSG is 100% save - you can even overdose normal water, so it becomes toxic!!!). I am not oppose what you say: There is little difference between the MSG which is isolated and MSG which occurs in natural products. Hence people who are sensitive on MSG, would have a reaction on both. But then there are actually examples, where a substance is harmless when consumed with other natural substances, but can get harmful when consumed without its "neighbors". And there are examples like fresh juices: Juices are pretty much not healthy (they have vitamins - but negative is the high sugar levels, which bring them into the nutritional value of soda pops) - however the fruits which are not juices are usually pretty healthy (due to fibres etc). Correlation does not imply causation - and scientifically speaking, it is a very rocky field, to do accurate predictions about a so complex topic.

@@Dominikmj Except MSG isn't complex. It is literally just a sodium salt of glutamate, a common amino acid. There is no physical way to be allergic to it. If there was, that person would be dead because glutamate is spread all across their body due to them being a living, biological being.

Much of what drives this MSG fear with all the anecdotal reports of the "Chinese Restaurant Syndrome". While there is correlation no causation has been demonstrated. Also, why is there no Chinese Restaurant Syndrome in China… or Japan… or South Korea… or Singapore or Thailand?

I made something like this by following the Townsend's mushroom ketchup video (good stuff!!!! Easy and self fermenting) then dried the solids and zapped them in the grinder after. It's instant flavor, and I don't even like mushrooms! The ketchup was great on beef and in soups. It's like Worcestershire sauce but deeper and still has that live culture goodness after you leave it to continue development in your fridge. I didn't can mine, just used a soy sauce bottle and slightly past perfect mushrooms we had leftover in the fridge.

I didn't have nutmeg, so I ended up using a little bit of pumpkin pie spice. It tasted great. I strained out the solids and put them in a low oven until dehydrated and then ground them up. Great stuff!!!

@@Julia-dr4g0n The mushroom seasoning that I use is only mushroom extract, mushroom powder and salt. I agree that it sucks trying to find weird products but I go to the Korean market monthly anyway because there are a lot of things we love from there and the mushroom seasoning we get is like six bucks and lasts us for months and I use it in so many things. Seitan, soups, spaghetti, taco "meat." I understand your misgivings. Do what works for you. We love nooch here too.

Hi Sauce Stash! I really enjoy your videos. I just wanted to ask, what do you think about adding a little mushroom seasoning to vegan dairy substitutes? I usually add a little salt because they are naturally hight in salt, but I the dairy flavor has something special to it, and I was wondering if adding a pinch of umame flavoring might help mimic that.

depending on which asian store i go to there are different brands and different names so instead i always look for the kind that has the least amount of sodium as my husband has horrible hypertension and a little bit of the veg/mushroom seasoning goes a long way without adding salt.

it doesn't really have MSG, but disodium guanylate, which, in reaction with MSG present, multiplies the taste of both by 10. try both together, you will be surprised

Since your always testing new stuff and new techniques, adjusting as you go, I think at the end of the year you should do your definitive favorites of each type of plant meat.Quick F Word style bacon, chicken, fish, beaf, lobster, best of 2019 sort of thing. Punctuate the year.

I.... I just use soy sauce? To get the umami flavour that is. For meaty flavour, I use smoked herbs 👌 (or literally the herbs I would use on meat, because raw meat doesn't have much taste - it's all in the seasoning)

I follow you online and recently purchased the exact mushroom seasoning from the Super Mercado for around $8.00 it taste great but after drinking 8 oz I started getting nauseated. A few days later I made a vegan stock with all my leftovers and added the extract. I couldn't wait and drank about 2 cups of the stock as a nightcap. I became violently vomiting for over twenty four hours. I had to use CBD tincture to stop the vomiting as nothing else worked. I noticed ingredients say calcium. Could this be from shellfish which I am highly allergic too? I loved the taste but the pain and suffering was unbearable. Anyone else had this happen. PS You really cant take back things to the Super Mercado but I tossed it as every time I even think about it I get panicky.

That sounds awful. I don't know for certain where the calcium comes from. Nothing on the label specifies shellfish so there is no way of knowing. The kinoko brand does not include calcium. I have never heard of someone having this reaction, so sorry that happened to you

Amazing this great chef replied It was my first time ever since the internet existed that anyone, let alone the owner contacted me. Some people have way to many comments I guess I did find further info these seasoning and reputable brands have been copied for many years and it's very hard to know the difference. The greatest benefit of cooking vegan us the revamping and truely modernizing of what you thought was the culinary art. Technically you are still eating msg, because mushrooms have a lot of msg, just like meat products. Msg isn't bad (unless eaten in excess, like salt) it's just a racist thing against Asian culture that was disseminated in the form of a misleading old article. Edit: you are eating glutamate, which is what you eat when you eat msg (monosodium glutamate separates in a water solution [your saliva] and gives a sodium ion with a glutamate molecule).

Glutamate is what’s naturally occurring, not mono sodium glutamate. They extract glutamate from seaweed and bind it to a single sodium particle (hence mono sodium) to turn it into a salt like powder

Would be interesting to actually do a double blind study. MSG vs SOY. Some people are reacting to the soy, rather than the msg. Sometimes there are other unknowns that people are reacting to.

BTW, I have added finely minced 'shrooms to seitan, but their moisture and not being powder were detriments. Your ingredient should be revolutionary.

Not to burst your bubble, but mushroom seasoning is still MSG in disguise. Mushrooms are VERY rich in glutamate, so if you dry them and grind them up, you get a powder with very similar properties to pure MSG. They get away saying "No MSG", because it's not MSG in its pure form, so it doesn't have to be declared as such. But it still contains a decent amount of MSG. It's the same for yeast extract, by the way. Personally, I am pro MSG. Of course, if ingested in excess, it's harmful, but so are table salt, sugar and even water. It has been shown in several studies that it's perfectly safe if eaten in reasonable amounts.

Not to burst your bubble but it is not MSG and there isn't MSG in this mushroom seasoning, there is glutamate. If you watched my MSG video you will see that I am PRO MSG, but MSG is Mono Sodium Glutamate which even though they both contain glutamate the glutamate in mushroom seasoning isn't bound to salt. Thats the only difference. For some reason people believe that the MS part of the G is what makes them sick... These are not my words.

@@SauceStache That is fair. I agree that the glutamate in the mushroom seasoning isn't Monosodium Glutamate. However, it dissociates once it hits saliva, liberating the glutamate. The only "benefit" that I could think of that free glutamate has would be if you gotta watch your sodium intake. Sorry if I sounded a little too antagonizing.

@@SauceStache There is no meaningful difference between MSG and G. MSG dissociates in your mouth and stomach acids, becoming sodium and glutamate. Meaning that once consumed, there is literally no difference between the two. Please don't cater to the anti-science people claiming it is harmful. They're wrong. Period.

@@FrankBredow If the amino acid glutamate gives you headaches, then basically every food you eat should do the same, along with simply being alive, since glutamate is an essential required amino acid for biochemical processes.

It's called health anxiety. Millions of americans suffer from it. If you believe something will make you sick, your body will release that chemical in the brain to make it feel like that effect. Msg itself does not cause headaches, nor can you be alergic to it, because its not an alergen.

Hm - I am not sold. If it is highly concentrated mushrooms (...) - it might have almost as much MSG as isolated MSG. At the end, it won't really change much. I am a MSG critic - but a reasonable one: I think the isolated MSG shouldn't be used (or overused) - it is just desensitize our tastebuds for "normal foods". If you are using normal mushrooms, tomatoes, parmesan etc. this effect isn't applying... cause you have got also the additional flavors (which you have got to balance). But the product is definitely interesting nonetheless.

That brand, “Ajinomoto” msg, whenever I eat it, I feel unwell. That mushroom granules I consume it I feel ok. I add granules to my soup, or other patties and they taste very good.
