So after my first experiment where I didn't take enough salt off, I tried to do this without salting them first. Just used paper towels. It worked fine, and was much quicker and less messy which works for me. However I found that the use for the bacon is limited, as it rehydrates after crisping if it comes into contact with moisture. So for example I prepared some sandwiches for travel. The following morning the bacon had lost a lot of crisp and was a little chewy. The day after that, even more so. If you add it to a sauce it goes limp right away, so for example you couldn't really use it on vegan carbonana. It goes kind of soggy. It is amazing when it's fresh off the pan, and you can eat it with scrambled tofu or stuff like that. My next step would be to make them very fine like bacon bits and see if that works. I have tried thicker and thinner slices, both are good - hot off the pan, well wait a moment to let them firm up. I also froze them at different stages. They freeze well, I think, I find it best to freeze them once marinated. I tried to freeze after cooking just to test - nah. Hope this helped. I love these videos but I like to experiment & find a way to make this practical & useful in normal more day to day cooking. At the moment it's fantastic kept frozen, for days when I want a bit of a cooked breakfast. Really impressed guests, this & Easy Egg!

@@contahumana MSG is short for a Monosodium Glutamate it is also known as Sodium Glutamate, It is the Sodium Salt of Glutamic Acid which is one of the most common non-essential amino acids. Glutamic Acid is naturally found in tomatoes, grapes, cheese, mushrooms and also seaweed along with other foods. So this is used as a food enchancer with a umami (Savoury) taste that intensifies meaty, Savoury flavours of food you can also just add foods that contain it too but its like concentrated Flavour that intensifies the natural without adding it by just adding other food that contain it in smaller amounts. Also like all things in moderation it's fine but in large amounts it's not a bit like you would use salt so don't be put off alot of things are dangerous in large amounts, just use sensible amounts and it's fine it alot of Chinese Restaurants use it. I hope this helps (By the way i absolutely love Brazil, Greetings from the UK 🇬🇧)

Also to add, glutamate is a neurotransmitter which is why it enhances the umami flavors. There are no scientifically proven harms to MSG, but always eating MSG can lead to higher sodium intake than one might expect, which can cause hypertension in the long run especially if you already have a salty palate. For people sensitive to MSG or overconsumption can lead to heart-attack like symptoms which can be pretty scary, but you need quite a bit for this to happen. It's not the devil popular media claims it to be, but it's also important to consume everything in moderation

I also tried leek which gets very dry and crispy very quickly and tastes more like bacon chips than meat but still also nice as healthy pringles alternative. I also tried it with chicory but that just wont dry out at all. I can finally have full English breakfast again! Hoorah! As I'm typing this, I'm trying the daikon but cut up into small cubes leaving them overnight to see if it will produce a decent mac&cheese or even better a spaghetti carbonara when fried as ham cubes. I cannot eat MSG because it kills my stomach. After years of stomach problems the doctors wanted to take out my gallbladder. I refused and started tracking everything I ate. The one common ingredient they all had was MSG (monosodium glutamate). After eliminating that from my diet I no longer have stomach troubles and kept my gallbladder. Msg is synthetically produced and tricks receptors in your brain to think food tastes better than it actually does. It does not actually make the food taste better. Natural msg can be found in seaweed.

Anyone who eats name brand chips like Frito Lay, and off brand mimics, are eating loads of MSG. Difference is that they use the proper name. *Monosodium glutamate* if you see that on the ingredients list, that's MSG folks!!!!! And it isn't bad, look at how young looking people are in countries that use it. Korea Japan, China, and India to name a few, their 40y/o tend to look 10+ years younger than most people living in America. I'll take MSG over iodized salt any day.

It’s very common in US and northern Europe to mistake meat flavour with all the stuff you put on flavour. So daikon bacon could taste the same as real bacon, yes, but not the real taste of mate could be mistaken with real taste of raddish, in Italy we are used to not garnish meat and veggies so much so its impossibile to confuse ‘em. Anyway maximum respect! It’s a great way to cook any raddish. Good job!

After watching your video yesterday I was intrigued. So I went to the store bought a daikon radish and made this exactly as your video - MSG, mainly because I couldn't find any MSG at the grocery store. I can say it was my favorite vegan bacon. Before this I use the rice paper. However it was very salty so I'm making it again this morning minus the salt I'm just letting it hang out on the paper towels for at least an hour and pressing it down and changing out the paper towels to get the moisture out. I think this is going to be my new obsession. Thank you for sharing. 😍😍😍

Accent is simply msg. Should be in every store if you're US. If you bought the radish at an Asian store, msg is cheaper there and simply called msg or monosodium glutamate.

MSG is what makes tomatoes taste good. It's literally just a fundemental flavor compound you find in a bunch of stuff all throughout nature and that's why it tastes so damn good. People gotta chill.
@myishacherry72423 жыл бұрын
Yes. But there is the naturally occurring kind, such as you mentioned in tomatoes, and is also found in mushrooms, seafood, naturally forms in parmesan cheese when fermenting ( what gives it that special umami flavor)..and then there is a a chemical, manufactured version, which IS harmful especially to our nerve function, & that's the kind that most fast food places and processed packaged food companies use lol....
