This dish was traditionally a Monday dish in our household. See Monday was laundry day, and a pot of red beans could cook pretty much all day while the household chores were done. As for a Louisiana dish, I think you definitely left out the hot sauce.

You can package your herbs in cheesecloth. I have used a smoked ham hock or shank, and smoked turkey tails. I serve it with a side dish of collards, savory cornbread to soak in the collard pot liquor. 😊

Years ago in Silicon Valley, I experienced red beans, rice and ham hocks. It was delicious. Every Yhursday at lunch, Moffett Navy base in Mt. View, CA. The officers club eould have it and you didn't have to go through the gate. It was delicious.

It's been a while since I made a pot of red beans, and now I'm wantin' some in a bad way! Instead of the Andouille, I usually use Conecuh sausage in mine, adds a good flavor, and we love it (makes really good sausage dogs, too)!! I usually use sat least a pound of sausage and just cut the sausage into slices - we love hittin' a good bite of sausage in our red beans. The idea of using chicken broth instead of water to cook them in sounds amazing - I usually just used water, but I'm gonna try cook 'em this way, and I really liked the idea of tying the bay leaves & such together before throwing them in is nothing short of genius, and though I never thought of doing that before, I'll be doing that from now on! Your recipe looks absolutely delicious, but the cornbread - let's talk about the cornbread. Although I do like sweetened cornbread, and it does have it's place, that's a no-no with red beans & rice - Mama used to call that "Yankee Cornbread🤭", and when we were kids, she'd make it for us. We used to eat it with other things, but as I got a little older, and started to cook, I realized two things: 1. cornbread ALWAYS goes with collards & such, but but it's a must with red beans & rice, as well as gumbo, and 2. you NEVER eat you NEVER eat "Yankee Cornbread" with the aforementioned. I love cooking my red beans in the crock pot, letting it simmer all day, and the broth turns out nice & thick - plus when the house gets to smelling REALLY good, I also get a little fun smackin' my husband's hand when he goes to stick a spoon into the pot to get a taste - you know, "quality control", as he calls it (I'm a mean, nasty ol' wife). We're starting to get into "the rainy season" here - though it's only September and it's not started cooling down yet, even though it's not much different from my "recipe" (if that's what ya call it, I don't really have one), I'm definitely going to have to try this. Oh - and your friend's idea of a hot bowl of red beans & rice and a scary movie marathon - genius, PURE GENIUS!! I have to go to the store for some red beans now, thanks!!

I grew up eating (and loving) Jiffy cornbread. (Northern Minnesota). I didn’t even realize there was such a thing as savory cornbread til I dated a guy who was from Arkansas and he brought cornbread bread stuffing to Thanksgiving! 🤦🏻♀️🤣! Anyway I would love to learn more about the dos and donts of both styles because they’re both delicious and clearly both deserve a spot on the buffet table. although maybe not at the same time? One trick I like to do for tying the herbs together is to just use a sprig of the thyme as the string. Doesn't really hold up super well for thick foods, but you also don't have a random string in your food either. :p

My family's recipe calls for a few ingredients most dont add that I think really make it. A little tomato paste right after you sweat the veggies, you wont taste any tomato but you will add a good bit of MSG thats find in them. Crab Boil, only like a teaspoon, right when you start sweating the veggies. Pickled meat, it ends up falling apart in the beans and can be added right after the beans release their 'sauce'. Used to eat this every monday and then more throughout the week from the left overs, now its an occasional thing since my fiancee isnt much of a cajun. Also, dont be afraid to toss the veggies in a food processors instead of chopping by hand. I recommend all my cajuns to give the first to ingredients a shot, a lot look at the tomato like its going to make it taste like tomatoes, but it wont. I also add tomato paste to my Gumbo and no one has been able to tell that its in their and everyone raves about it.

I grew up in New Orleans in the 50's and 60's and my momma, a Landry from the bayou, cooked red beans every Monday. It became my favorite meal even today, now that I'm retired and travel the country in my motorhome. She always used "pickle meat" in hers which is hard to find on the road. We also like something smoky, like a smoked ham hock, smoked neck bones, tasso, etc. I like to fry off the trinity and Andouille sausage (Jacob's World from La Place is the best) in some bacon grease (and why waste the bacon I just rendered) I always add a cap full of Zatarains liquid crab boil for spicy seasoning in addition to some Tonys and Tabasco. I just made a pot of gumbo earlier today but looks like tomorrow is red beans day, as you flung a craving on me. Corn bread is a great side dish, but I don't like it too sweet, so I'll usually make it from scratch. It's easy, just don't over think it. I sometimes add a dollop of mayo to my plate of leftover beans and was wondering if anyone else did likewise? What kind? Blue Plate, of course, Dawlin'!

I’ve lived in northern Minnesota for 50 of my 60 years. Growing up what we called Mayo was really Miracle Whip. I didn’t have real mayonnaise til I went to college when I was introduced Hellmans which is the preferred mayo of the Midwest. I finally ordered some Duke’s about 10 years ago after seeing it on Diners Drive-ins & Dives so much. Way better than Hellmans I thought. I was able to get it through Walmart too at a decent price til a few years ago. Then I discovered Blue Plate during the pandemic. I think it’s even better than Dukes. Now Blue Plate is getting pretty hard to come by up here at a decent price. I can go back to Hellmans but with sadness. I gave a jar of Blue Plate to a friend who grew up east coast eating Hellmans. The Blue Plate blew her mind. Said hands down way better than Hellmans.
