Very good, the only thing I would change is sautee the onion first and then add mushrooms, as onions takes longer to get soft, and mushrooms shrink pretty bad if you overcook them.

Seems like a good way to overcook your pork chops. 25 minutes simmering in the sauce?
@honrughes5 ай бұрын
What happens during slow-cooking, with juice or sauce, is that the collagen that's in the meat's muscular tissues is gradually transformed into some kind of gelatin and thus allows the piece to be more tender, the more it simmers.
@brett3275 ай бұрын
@@honrughes not with a lean cut like a chop. You're just going to toughen it up and dry it out.

The hubs & I are on fixed incomes & we eat farm raised pork. Our steaks & chops are thick, thick! Find a local farmer! We bought one at auction & had it butchered, but there are services where you can find decent meat for a decent price. Find someone to partner in on it. We buy a local cow from a farmer but we share the cost with family members & divide it up.

I think you mean that they do it differently than you do. Why do you care how someone else holds their knives and cuts their food? It's not your food. You can cut your own food any way you like.
@notagiantseaslug55235 ай бұрын
You think this was bad technique? My midwestern mother in law uses only a paring knife, and no cutting board. Cuts every food item the same, garlic, onion, meats, cheese, veggies, whatever it all comes out in uneven weird shaped chunks. (Her food isn’t great lol)
@mustwereallydothis5 ай бұрын
@notagiantseaslug5523 lol that was an almost universal technique of grandmas back in the 60s and 70s when I was young. It never made a bit of sense to me. It took at least three times as long to do it that way. I think they just hated washing dishes so much that they would go to any lengths to avoid dirtying a cutting board.
@notagiantseaslug55235 ай бұрын
@@mustwereallydothis they are from Kansas, and claim German ancestry. She isn’t even that old, about 60. Doing less dishes may be part of her rationalization for doing this, but more so I think it’s just what her and her people have done for generations. I’m teaching my girlfriend and her kid how to use knives properly in an attempt to break this destructive cycle. 😂

You cook the chops in the sauce for 25 minutes? Are you nuts? You cook the chops until the internal temp is about 140 degrees. Center cut chops are very lean, the longer the cook the tougher the meat. Remove the chops, tent them and keep in a warm place. Once the sauce reduces to the desired thickness it will be done.
