RECIPE (2 servings)
INGREDIENTS:
1 red bell pepper
1 yellow bell pepper
4 baby corns
4-6 button mushrooms
1 carrot
1 small broccoli
3 garlic coves
2 tbsp cooking oil
1/2 tsp salt (or as needed)
1 tsp dried oregano
1/2 tsp red chilli flakes
2 tbsp butter (if using salted, add salt after adding butter)
1 tsp lemon juice
PROCESS:
1. Slice all vegetables into similar sizes
2. Heat a wide pan/skillet on medium high flame
3. Infuse 3 crushed garlic cloves into 2 tbsp oil. Adding chopped garlic might end up in burnt garlic. This way we can add garlic flavour to the vegetables without burning the garlic
4. Once the oil is fragrant, add the mushrooms and sauté until browned
5. Next add the broccoli and sauté for 2 minutes. If you like soft broccoli, add parboiled broccoli instead of raw
6. Next add in carrots and sauté for 2 minutes
7. Next add in bell peppers and baby corn. Sauté for 1 minute. By now the vegetables will be tender yet crunchy
8. Add salt as needed, 1/2 tsp dried oregano, 1/2 tsp red chilli flakes and sauté for 1 minute
9. Switch off the flame, add 2 tbsp butter, 1 tsp lemon juice and mix well
10. Optional: garnish with sesame seeds and serve with grilled meat, seafood or tofu

SUBSTITUTES:
• Other vegetables that can be used?
Onions, cauliflower, boiled potatoes, sweet potatoes, peppers, beans, zucchini, snap peas, asparagus, squash and Brussels sprouts
• No oregano?
Use mixed herbs, thyme, tarragon or Italian seasoning
• No lemon juice?
Lime juice or apple cider vinegar works too

TIPS:
• If using salted butter, be careful while adding salt
• Sautéing the vegetables without adding salt keeps them from releasing excess moisture and turning soggy
• Using a wide pan or skillet will ensure the veggies sauté well

This makes me wanna recook! I love how you give me the idea to use lemon juice. And the simple video and details description helps alot! Thank you so much for sharing 💖 Though idk why, but whenever I follow a recipe/cook these days, I feel like something's missing even if I add extra garlic and a little too much salt. It didn't happen before. I took a break from cooking for a while and it looks like I lost the ability to cook and I dislike my own cooking. I'm so annoyed with myself.... Hopefully, as time passes, it will get better.

Love this video. How long should I cook if i dislike crunchiness ? Also if any sauce or dressing could be added what would you suggest?

After sautéing, you can add some veg stock/chicken stock/stock cube dissolved in water, cover and cook until they’re soft. You can also add a splash of cream or add a stir fry sauce too.

Ultimate and awesome!! 👍 I added a generous amount of favourite Garlic and butter...stir frying makes the Color and texture be retained..all the ingredients made the vegetables taste better..definitely have added to my list for those few days, when I go vegetarian... Thanks!

Is there a protein (chicken, fish, etc) that pairs well with the flavors of this? I am a total newb to cooking and I have no intuition for these things 😅

Yes you can cook your chicken or any protein you like separately and plate it with the vegetables or sometimes i cook my chicken in a pan and when it's done i take it out and saute my vegetables in the same pan to get that flavor
