I’m a white guy pushing 50, up here in Michigan. My first all black cook out was probably ‘87/88 with my good buddy D’Andre at a family summer picnic on Belle Isle, in Detroit. Fun memory! Fishing the Detroit river (didn’t catch sh**), playing hoops, and then shifted to freeze tag and sparklers after dark. I guess I was naive, because I didn’t realize until way later that I was the only white person at the whole event. In summary, DAMN fine BBQ.

Before I got hurt I used to cook a lot of BBQ. I have a pull behind BBQ pit that I can cook 6 whole hogs at a time. I cooked different for my black friends and customers than my white friends and customers. For anyone reading this and don’t know, most black folks HATE mayonnaise! For them I used none or very little mayo in the slaw. Now I make two different types of slaw. Slaw to go on the BBQ sandwiches and what I call eating slaw which is on the plate along with the BBQ beans, fries, etc. I made a vinegar slaw for black folks and a mayonnaise slaw for the white folks. And I always keep several different types of hot sauce. With varying degrees of heat from Texas Pete to Mad Dog Plutonium, I gotcha covered! And I keep it in clear bottles clearly labeled hot sauce along with the brand and heat level. I don’t want to set someone on fire looking for ketchup. I keep the ketchup in a red bottle and it’s labeled ketchup. So there shouldn’t be any confusion. But I’ve always noticed most black folks prefer vinegar based sauces and slaws and white folks seem to prefer mayonnaise based slaw. No matter what the color of the peoples skin, we have always had a good time and a belly ache from eating too much at the end of the day! Man I wanna fire up the smoker and start some Q’. I done went and made myself hungry! 😂

He was playing about not knowing what hot sauce was. I'm in south Mississippi too, and everybody has hot sauce. Myself, I use tartar sauce to dip my fish in, and mix ketchup with hot sauce for the French fries. And you HAVE to have coleslaw and hush puppies there too. (DANG! I'm hungry now!)

@@thunderbutt357XD A hush puppy is fried cornbread batter. We chop green onions and mix in and drop into the hot grease using a stirring spoon. They're yummy! They got their name because they were fried to to toss to any surrounding dogs to make them "Hush" and stop begging for fish.

I like tartar sauce when it's chilled but if it was sitting out in the hot sun for a few hours I'd be skeptical to eat it. I don't know if it goes bad quickly in the heat but I prefer it chilled.

Tartar Sauce definitely goes well with Fish. But in Western Europe we use Remoulade. It´s kind of a Herb infused Mayo, but what´s in it varies WILDLY depending on where you buy it. All go well with fish tho. I´d say the Netherlands have the best version of it, no wonder, they know their fish.

Tarter sauce, and it has to be dill not sweet pickle. When I go to a restaurant here, I bring my own tarter sauce that I made at home if I am going to have fish. I did notice that in the south they put sugar in everything. I moved here from the pacific northwest and I don't like sugar in my cornbread or any bread for that matter, hot cereals like grits or oatmeal. I like sweet tea but with about 1/2 the sugar they put in it. I am surprised that everyone in the south doesn't have diabetes. soooo much sugar! lol
