🧑🍳Cooking tip: In this recipe you can use nutritional yeast instead of the parmesan cheese.😊 Also I didn’t use any salt because my homemade broth is already salted.

🥣Ingredients :
3 zucchini / bottle gourd
1tbsp plant unsalted butter
1 medium onion
3 garlic cloves
1/2cup | 90g pre-rinsed quinoa
180ml | 6fl oz vegetable broth
1/4cup | 20g vegan parmesan or nutritional yeast
2tbsp fresh dill
🥣Tomato sause:
1tbsp tomato paste
200ml | 7fl oz water
salt & pepper
Method:
Partially peel 3 zucchini [bottle gourd] giving them a festive striped look.😊
Cut each zucchini in half.
Gently start turning the spoon (corer) using slight pressure to push into the zucchini flesh. Make sure not to poke the bottoms.
Repeat after me as I show in the video and you will be successful.
Transfer zucchini into a baking dish.
In a skillet melt 1tbsp plant butter.
Chop 1 medium onion.
Add the onion and sauté until just starting to turn soft, stirring occasionally.
Chop 3 garlic cloves.
Reduce the heat to medium-low.
Then add 1/2cup pre-rinsed quinoa.
Pour 180ml | 6fl oz vegetable broth.
Stir and cover the pan.
Simmer for 15 minutes until the liquid is mostly absorbed.
Grate 20g | 1/4cup vegan parmesan or you can use the same amount of nutritional yeast instead.
When quinoa is cooked turn the heat off.
Add grated cheese or nutritional yeast.
2tbsp fresh dill.
Mix well.
Stuff each zucchini with the quinoa mixture.
On the top of stuffed zucchini add mixture of 1tbsp tomato paste and 200ml water.
Bake in the preheated oven at 360F | 180C for 40 minutes.
