Fresh porcini mushrooms, gift from friend, I invited Tarzan, great chef of both western and Eastern cuisine to cook this precious mushrooms.
Step 1
Use brush to gently clean surface of porcini mushrooms, wipe with wet paper towel; separate head and stem, use brush to clean the inside of head, scrape the stem gently with knife, cover with paper towel.
Step 2
Mince shallots, chiffonade (slice) parsley, dice porcini mushrooms. Set aside.
Step 3
Heat oil, fry shallots in high heat , add porcini and fry, add Madeira wine, add a bit of salt and black pepper, fry until wine is reduced, place in the casserole bowls.
Step 4
Add egg into casserole bowl, sprinkle parsley, bake in water bath for 3 minutes.
