Step 1
Prepare watercress, bamboo shoot, dry mushroom and dry tofu.
Step 2
Boil water in wok, add pinch of salt and oil, blanch watercress for 1-2 minutes, and place in ice cube bath.
Step 3
Finely dice bamboo shoot, dry mushroom and dry tofu.
Step 4
Pour diced bamboo shoot, mushroom and dry tofu into pot, cover with broth and cook until broth is reduced. Set aside to cool.
Step 5
Stack up watercress, dice finely, squeeze out all liquid, loosen clumps in a bowl, and remove bigger ones.
Step 6
Mix together bamboo shoot, mushroom, dry tofu and watercress, add fish sauce and sesame oil, combine well and taste. Seal with plastic wrap and place in refrigerator until cold and serve.
