Looks good. I have a Harvester. Ive smoked a lot of butts and have that dialed in. I've never smoked ribs. Gonna try your way. So your total cook is about 3 hours?

Great video! Question: Do you like the drum smoker over the off-set stick burner? Been debating for a while now to get a drum or an off-set while I move away from my Komodo and pellet grill. Any thoughts? Many thanks!

Thanks! They both have their advantages and it really depends on what you like to cook. The drum is constantly cooking in the flavors of the meat. As the juice drips on the coals it is kissing the meat from the coals. Most competition people prefer the drum style to cook hot and fast. Drums can cook low and slow but work better in a hot and fast method. Traditional offset is more for low and slow even though you can cook hot and fast. I hope this helps without being confusing

With them hanging, how do you temperature control them to make sure they cook evenly?

That is the fear of everyone including myself when you first try it. You would think it would be much hotter closer to the coals but in actuality it isn’t much different. I do hang the meatier side closer to the coals but that really doesn’t matter. The only thing I do is rotate them like you see in the video every 30-45 minutes. I just cooked some last night. Perfect ribs in less than 3 hours every time.

@@Rock3head yes you can put a grill rack at 3 different locations actually 4 technically over the charcoal basket area. I have a Tri Tip video on here that shows me hanging it to smoke and then searing over the deflection plate. Love this smoker/grill
