As someone who lives outside the US, THANK YOU for explaining and describing what graham crackers is! Often times people that live outside the US get "forgotten", and it can be quite difficult to find alternatives when you don't even know what exactly it is in the first place. I also appreciated the explanation of what smores are, even though at this point thanks to social media and movies etc I would think most people know what they are, it's really really nice to make sure that EVERYONE knows what you're talking about. It's something small that means a lot.

Hey Morgan just wanted to let you know that in the past one year I have gained lots and lots of knowledge and exposure from your videos. I am a barista for almost three years now but the first two years didn’t really teach me nothing except for making normal espresso-based drinks from the run-of-the-mill blend that every cafe uses. Just when I was getting bored with the menus, I was searching for a more creative and outside of the box beverage that can help non-coffee drinkers to try coffee as well. Then I found your video talking about light roast beans and coffee mocktails that to me, was the perfect knowledge I needed to start explore about what coffee can actually do. After that I was deep in the rabbit hole of coffee beans exploration, reading all the varieties, different roasts for different types of beans, taste notes, how altitude changes the character, and new cutting edge processing methods. Biscoff are specifically made or marketed to dunk into coffee in their country of origin. The translation from speculoos to biscoff is actually the combination of biscuit and coffee. I grew up asking my dad to dunk my biscuits into his coffee.

The reason there's a bigger drop off in taste for lower quality white chocolate is that it isn't technically chocolate. For milk and dark chocolate, it still contains cocoa. But for white chocolate, it's supposed to be made with cocoa butter. But a lot of the cheaper white "chocolate" doesn't have any cocoa butter at all and you'll notice it doesn't have the word chocolate anywhere on the label. They're just vanilla candy melts most of the time! If something is white-white, it doesn't have cocoa butter in it. If it's a rich creamy off-white color or even almost yellow, it's much more likely to contain cocoa butter

I’m especially intrigued by the pairing of white chocolate and cardamom! I learned a recipe many years ago where you crack whole cardamom’s pods and infuse a French press brew with them, and I know that’s an excellent combination, and I love white chocolate.

Lifelong UK resident here, s'mores actually are pretty well known over here, although we usually use Digestives rather than Graham Crackers since that's what we have available. And yeah, we were just as confused by that Bake Off episode as the rest of you!

My cozy and lazy recipe is the following: 30g espresso(preferably the chocolaty, nutty, caramelly kind) 20-30g good/homemade egg nogg 100-120g steamed milk Pour in the egg nogg, extract the coffee straight onto the egg nogg, swirl a bit(yes, the crema is basically gone), steam the milk, pour on top of the coffee/egg nogg mixture, latte art optional

About 20 years ago I was making chocolate-covered vodka-infused chilies for a treat at our Hogmanay party ( New Year Eve party in Scotland). I cut the ends off the chillies and used my fingers to pull out all of the seeds. I was very careful not to touch my face. I spent the it with my hands in the air, trying not to touch anything. Feeling your pain about straining into a narrow container. A couple of years ago I bought a set of a wide funnel and fine mesh strainer that clicks directly into it from modernist kitchen, and though it was expensive (~$50), it has really paid off in making straining all sorts of things so much better.

Hi Morgan, I was wondering if you could answer a couple of questions regarding the Mocha: I have a superautomatic coffee machine with built in milk carafe, so was wondering how many ml of milk would go into the drink, would it be best to use a single or double shot of coffee & instead of the chocolate syrup could I use pieces of chocolate in the bottom of the mug/glass melted by the shot?. You could totally melt down chocolate chunks into your espresso, just ensure you do lots of stirring. I’d use a double shot of espresso, somewhere around 35-40mls of espresso in total. 8oz of milk is about 230mls so I’d start there and adjust to your taste preference.

I am staring at the graham wafer milk pour in mild horror knowing that I would be doing the exact same thing while also trying to figure out if there are coffee solutions - how much could I make in my french press versus how long would it take to filter through a v60. All the while knowing I would probably still end up standing over the sink trying to do it as quick and relatively painlessly as I can.
