The last Friday of the Year 2021! A wholesome year it has been, and we all, now, have a new chapter of life chronicled - written in journals or simply in our minds so that it leaves a mark, an impression :) These Thumbprint Cookies by themselves have no lesson to teach, but I'd like us all to remember a simple truth: “We leave a mark wherever we go, and if it's in our hands, we better leave a good one.”
Thumbprint Cookies get their name from the fact that they're impressed upon by the thumb; they're considered to be homely and comforting holiday snacks. That said, these Cookies are uber delicious, delicate and decadent. Who would not want to bite into these button-like gems? There's butter that guarantees a melt-in-the-mouth experience, there's just the right amount of sugar for subtle sweetness, and a well of jam that makes your eyes glitter. All in all, it's a cookie (or a biscuit) that could be categorised as the food of the fairies, angels and other pretty creatures. Give it a try this new year!
Ingredients:
1/2 Cup Salted Butter (softened at room temperature)
1/3 Cup Powdered Sugar
1 Egg Yolk
1 teaspoon Vanilla Essence
1 & 1/4 Cup All-purpose Flour (you may need 1/4 Cup more to form a soft dough)
Any Fruit Jam for the filling
Powdered Sugar for dusting on the top
This recipe gave me 30 cookies. It may vary depending on the size of shaped cookies.
Baking Directions:
•Preheat the oven at 160°C for 15 minutes.
•Bake the cookies with some distance between each at 160°C for 12-14 Minutes.
•Once done, let them cool for some minutes before handling them, as they are delicate darlings when hot.
Pack in airtight jars/containers.
Tips:
• First, add 1 and 1/4 Cups of flour, then if required, add some more to make a soft dough that doesn't stick to your fingers when shaping it into spheres.
• Slightly flatten the cookie sphere, and make an impression (with your thumb/fingers, or any instrument). If you wait too long to make the impression, there's a possibility that the surface could dry a little and then an impression could lead to few cracks.
• If the jam you're using seems lumpy and thick, simply give it a quick, vigorous mix to smoothen it a little; it will help when filling up the cookie.
• Kept an eye on the batch that bakes; these cookies look best when still blonde and not when browned.
