I bought a bag of chicken feet once and made a chicken soup in the crock pot. When I pulled it out of the fridge the next day it had turned into jello. Literal chicken soup jello. It was a bit off putting but I still ate it all. It turned back to liquid when I reheated it so it was fine, lol.

God I love this sort of braised chicken feet so much. Anything that is not the hard bone has a very soft, slurpable texture and they really stewed some great flavours in there. We call em "Phoenix Claws" in Chinese restaurants. I feel like instead of using the pressure cooker, a steamer would be a better idea. But also I can see this delicacy being difficult for the Western world to enjoy because the prized textural elements are exactly what a lot of ya'll dislike.
