Tikhat God Sheera Recipe / Upama
Ingredients:
1 cup semolina (rava/sooji)
2 - 2.5 cups water (adjust based on desired consistency)
1/2 tsp ghee or vegetable oil
1/4 tsp mustard seeds
1 tsp urad dal (whole black gram)
1 tsp chana dal (whole Bengal gram)
1 finely chopped green chili (optional)
1/2 finely chopped onion
2 tsp.sugar
Salt to taste
Chopped coriander leaves
Instructions:
Roast the Semolina: In a pan over medium heat, dry roast the semolina without any oil until it turns light golden brown and fragrant. This takes about 5 minutes. Set aside.
Temper the Spices: Heat the ghee or oil in a separate pan over medium heat. Add the mustard seeds and let them splutter. Once they start popping, add the urad dal and chana dal. Fry until the dals turn golden brown.
Sauté the Aromatics: Add the green chili (if using) and onion to the pan and saute until the onion is softened and translucent.
Add Water and Seasonings: Add the mix well. Pour in the water and bring it to a boil.
Cook the Upma: Slowly add the roasted semolina to the boiling water while stirring constantly to avoid lumps. Reduce the heat and simmer for 3-4 minutes, or until the water is absorbed and the semolina is cooked through.
Garnish and Serve: Turn off the heat and stir in chopped coriander leaves (optional). Serve hot with coconut chutney or sambar.
Tips:
You can adjust the amount of water depending on how soft or firm you like your Upma.
For a richer flavor, you can add chopped vegetables like peas, carrots, or chopped capsicum while sauteing the onions.
If you don't have ghee, you can use vegetable oil instead.
To make a vegan version, skip the ghee and use vegetable oil.
This is a basic Upma recipe, and there are many variations you can try. Feel free to experiment with different vegetables and spices to create your own favorite upama.
