Fun fact: The coffee we used for the April Brewers Cup in LA was a Ethiopian Heirloom grown at Caballero. I think the Los Pirineos SL-28 was better. It was winey and chocolatey Also PLEASE review Special Guests in London. They had a Los Pirineos Geisha that was great.

Ethiopian heirloom in Caballero sounds like the type of coffee we love reviewing 😉 We'll go ahead and add Special Guests to the list. Who are we to deny the April Brewers Cup Champion?

The batch of 2024 Caballero Gesha from Tim this month is incredible. Really enjoying. I actually cupped it blind with my partner vs all the other coffee’s I have had this month because of how blown away I was and it was both of our favorites. Really enjoy the Body/texture it’s giving.

Have not heard much about this year's Caballero Gesha so that's good to know. Had a great experience with it the other time it featured on this channel so it does have a very nice ceiling on it. Appreciate the info!

I had this season’s Carabello Gesha, SL28, and Catuai roasted by Tim Wendleboe. For my tastes, the Gesha was far and away the best, with elegance, florals, delicious brightness and a long finish. The SL28 was interesting - I think I got less of the milk chocolate than you did. The Catuai was the most traditional in its profile, but still enjoyable and notable.

When the Caballero Gesha is at its best, it's such a lovely coffee. Nice to hear this year's crop was nice, appreciate your feedback on all three of the Caballeros!

Thanks again for another great review. An enjoyable coffee with nice structure as you mention. It was interesting to see how an SL28 tastes grown in Honduras. It was probably a little more muted in terms of fruit/berry flavour than I initially expected. I noticed from reading the comments to Tim Wendelboe’s KZbin V60 video that his brew recipe changes depending on the grinder he is using. In a reply to one of the comments he mentions that if he is using a Wilfa Uniform Grinder his brew recipe is 60g per litre or 16.667 to 1. I use a Wilfa Uniform and find this brew ratio gives a more balanced cup with more clarity. By comparison I find the 15.38 to 1 recipe to be too strong for my liking for a lot of TW coffee’s as it brings out too much of the herbal flavours for example. I find when I use less coffee that the herbal notes are more subtle and much more pleasant. Be interested to hear if you have tried TW’s coffees using a lower dose of coffee to water.

Hey Ian, thanks for the feedback/information. Have not tried his adjusted recipe, but it is something definitely worth trying. Always felt that added clarity wasn't usually needed as his coffees are very clean. Same thing with the herbality, it felt like an expectation for his coffees because it's an ever-present component within them. That being said, both things appeal heavily to us as clarity is our top priority and, truth be told, we could give or take the herbality 😅

Did you ever try the Ilse mejorado from Abel Salinas? Wondering your thoughts on that compared to other roasters that you reviewed of the same beans.

That's the one version of it we didn't try funny enough. We'll be releasing a review on Flower Child's and September's Abel Salinas (though the September one is still resting) but we were already working on enough Ilse coffees at the time

I picked the up Ilse Mejorado. The V60 gave me a huge drawtime time, so I switched to the Aeropress with a Prismo to save the headache. Getting a good result with a 1:19 or 1:17 ratio so far. Curious on your thoughts and findings. :)

We use the standard April recipe for all the coffees we brew with the April brewer in either their 13g or 20g suggested recipe. This one was brewed with 20g so we went with that one: 20g Coffee - 300g Water 0:00 - 0:10 - 100g Pour - 30g Circle Pour / 70g Center Pour 0:35 - 0:45 - 100g Pour - 30g Circle Pour / 70g Center Pour 1:05 - 1:15 - 100g Pour - 30g Circle Pour / 70g Center Pour Total Time : 3:10 - 3:30 Minutes

It's usually 4-6 throughout the week and then maybe 6-8 on the weekends if we need to catch up 😅

Personally, the Caballero Pacamara left a stronger impression on me than this SL28. Definitely was hoping for more of that characteristic Kenyan brightness, but like you said, certainly not a bad cup. I was actually anticipating this to be a review of the Los Pirineos Sudan Rume or Ethiopian Harar since those two stood out to me as rather unusual. Later found out that they were only available to subscribers due to low stock which is a real shame. Would have loved for you to have tried the Ethiopian Harar as that one really impressed me with great structure AND some decent acidity. Anyways, great review as always.

Both of those coffees do sound interesting. Trust me, if they were available instead of Echemo, we would have purchased either of those so fast. Downside to not being subscribed to anyone is that you don't get their limited coffees. To be honest, the only Caballero that has left a strong impression was the first time we had the geisha. Both this and the Pacamara were nice, but that's the extent of it for me personally. Thanks for the feedback as always 🙂

Found it all right. Not as good as other Hondurans I have had the last few months, not as good as the SL-28 Costa Rican from April (although not washed)

The concept of growing an SL28 often times sounds better on paper than it turns out....appreciate the feedback on it 🙂
