One of Barbados traditional meals made in the month of November.
Recipe calls for
2 lbs. of cornmeal
1/4 cup of raisins (optional)
1 lb. of sweet potatoes
1 tsp allspice
2 cups of grated coconut
1 tsp nutmeg
1 tsp cinnamon
1 tsp salt
2 eggs (optional)
1 tsp vanilla essence
1 tsp almond essence
1/2 cup of flour
2 1/2 lbs. pumpkin
2 cups water
8 ozs. butter
1/4 cup coconut oil
2 lbs. sugar
1 cup milk (optional )
Banana leaves
Greater the pumpkin, potatoes, and coconut. Melt butter and coconut oil, beat eggs and set aside.
Cut banana leaves in squares, place over a heated stove on both sides.
Combine all ingredients in a large bowl blending together well.
Put spoonful of mixture in square banana leaves, fold over well and place in a steamer over a pot of boiling water at median for 1 1/2 hours
serve and enjoy.

Hi Tinarine, I enjoy your recipes; I grew up in Barbados during the 60's Conkies and stew dumplings are the same thing. I use milk but never eggs in my conkies. All the other ingredients you use I do too.

Hi Yvonne, happy holidays! I tend to say Conkies a lot but yes its the same name as stew dumplings, A lot of people don't use eggs but its a preference, I feel it makes my conkies nice and smooth, but that can be just my imagination. Thanks for watching have a great evening

I use brown sugar and instead of corn meal, I use corn flour. That is what my grandmother used. They come out very nice and smooth.

Just wanted to to say thanks for posting. My husband and I watch your videos every Sunday. When you don’t post, we watch older ones. He’s Bajan. You always bring back memories for him. You are also teaching me how to cook Bajan food too which he loves. So again thank you very much.

That's how it was done back in the day to use as a steamer. I make them generous, other wise I'll have to eat at lease 2 to be satisfy. Thank you for watching.

Your recipes are always welcome. Remember, variety is the spice of life. I too am Bajan and strongly relate to the comments you often make in the course of your presentations. As an older person, I find it important to point out that the making of conkies in November long predated Independence. As far as I remember, it was associated with Guy Fawkes Day. For those who may not know, Guy Fawkes was the Irish guy associated with the Gunpowder Plot of 1605 -the intention of which was to blow up the British House of Parliament. He was unsuccessful in so doing and was consequently hanged. The English celebration that thereafter followed was called Guy Fawkes Day. In Barbados, celebration of the event included mass fireworks displays throughout the island and just about every household had its supplies of conkies to which every child looked forward. It has often been said that bajans are “more English than the English” so you can understand why the event was celebrated with such gusto. In terms of cooking, many persons now resort to doing so in roasters in the oven which they find an easier method.

Hello Dave, Thank you so much for watching! I remember how everyone celebrated the day it was such fun, we burned tires and sang burn Mr, Harding. My grandmother always celebrated with her conkies. There's a lot of equipment today that makes life so much easier, I say why not give them a try. I appreciate you watching thank you

Hi Jennifer, I find the banana leaves in the Spanish supermarket in the refrigerator section but that's here in Florida. When wrapping your conkies first wrap them in parchment paper then the foil. Thanks for watching.

I like that you substitute the shortening for coconut oil 👍🏽 Absolutely, I am with you with all of the above except for the egg, no eggs in mine but that is my preference.

Yes the coconut oil is a much healthier choice than lard. The good thing about this recipe is you can add or take away. The recipe comes out so creamy and smooth, I cannot take anything away. Thanks for watching

Hi shouting out from Barbados I have one left in the fridge so iam going to heat it up an enjoy. Yea conkies and stew dumplings are the same the older folks never put rasins or eggs so they called them stew dumplings. I still dont use eggs because I learned from the old school❤ love your barbadian recipes.

This has inspired me to make some within the year. I've had my mom's recipe now for a while but am looking for the best food processor to grate the sweet potato and pumpkin. To my knowledge, conkies and stew dumplings are the same and must have sweet potato.

Wonderful! Stew dumplings and Conkies are the same thing, there are just called by different names, don't ask me I have no idea why lol. A food processer is a wonderful tool to have in your kitchen. I hate gartering. You'll need to grater sweet potato, pumpkin, and coconut. Hope you enjoy making the Conkies. Thanks for watching, Happy New Year.

Hi Darlington, I haven no idea lol! You'll need a large pot for your conkies and if you happen to have a steamer that can fit inside perfect, if you don't just add banana leaves or chutes on the inside. My pots are very old I've had them a very long time, I will be replacing them in the near future.

Good afternoon miss Tinarane... before I comment on your fabulous conkies . I'm happy to hear that my little sugar bear 🐻Camden is feeling better. I hope to see him in your Thanksgiving or Xmas video . It's always an added bonus . Now about the controversy over conkies . You must keep doing your thing , because it's all in the taste & presentation that matters. I believe the reason for the name stew dumplins is how you demonstrated the technique placing leaves in the bottom of the pot so water would not seep through hence the name " STEWDUMPLINS" . I find some of your viewers can be a bit critical . I don't think they know the definition of the word invent , because milk & eggs were around before you & I were born . My mother and grandmother all my old ancestors made conkies differently but they were delicious . I make my own with butternut or buttetcup squash which is rich in colour and tasty . All that said I will be making some for our independence. Until then ; keep sweet and as usual hugs and kisses 💋for baby Camden. Have a good day 💓

Hi Angela good night! Camden is doing so much better, we were worried about him for awhile, the Dr said it was an ear infection and put him on an antibiotic but he was still not feeling well for awhile. we recognize he was cutting teeth, a few teeth came bursting out, after that he's back to his old self at home and daycare. I use both eggs and milk, it makes it very creamy. That's how I like it. Creamy.

I had some Indian girl cornmeal my sister in law brought me from Brooklyn but it was not enough so I added grace fine cornmeal to it. I really don't think it matters. I am glad you enjoyed the video.

I would not make them directly in foil, use parchment paper then wrap in the foil paper.

Hi Tayle! Bajan living in US 😀 You have to surprise your mom by making her some conkies. Plan everything ahead of time and then its just a matter of combining all ingredients together. Believe me your mom will be so happy you did it.

I have made some changes in my Conkies. I use coconut milk coconut palm sugar coconut oil and more cornflour than cornmeal.

Hi Cecila, As long as the conkies come out tasting good that's all that really matters. Some people get very upset at the fact that people add milk and eggs, as you know its all optional. I'm glad your mom makes hers just like mine so I know there taste good

Don’t agree with you Tinaraine. I think I’m around your age. Egg is used by some other territories but certainly not barbados. Remember some people are allergic to egg and plus you’re not doing cake. I do mine natural and they are a die for. No eggs nor milk. My moisture comes from the pumpkin

That Devil worshipper "Guy Fawkes" had nothing to do with the black descendants of the enslaved of Barbados and their celebration of Independence and Bajan Conkies, the only link to such is two lines from Wikipedia.

I dont believe I've ever said Guy Fawkes had anything to do with enslaved of Barbados, what I talked about is Guy Fawkes trying to blow up the British parliament and because he failed to do so, the king order that on the 5th of November will be a day of celebration and that day will be called Guy Fawkes day. people in the Island celebrated by making this traditional dish we call conkies.

Good evening. The original conkie / stew dumpling does not contain milk nor eggs. When you do that you are making cake. We should stick to the Bajan tradition and keep our Bajan culture. Do not invent. Thank you. Have a good night.

Hi Joyce, good night, I love the bajan traditions and would always be mindful to stay true to it's culture. Me adding milk and eggs is just my preference but its optional to others. Its like years ago you were limited to the amount of things you did with a breadfruit, you boil it or roast it, now today you make pies, flour, chips etc. Now that don't mean we've moved away from the culture, it only means we've evolved.
