I used my ninja food processor to grind beans. It took a little longer but worked fine and well without a dedicated bean grinder.

I have the big one. With the cafe forte setting and the iced coffee carafe. I bought it a baratza for its birthday. Would you believe this whole time I've been trying to use that scoop to measure grinds? Whoops!

Does anyone know if you can leave the Ninja's water reservoir filled up with water (like you do the Keurig) or do you have to fill it with each use, like the old style coffee makers?

I have the big squared off model and there's always at least a little water in it. I leave mine with a cup or two in it just so I don't have to be precise before coffee. I leave precision to the machines that time of day.

The Hoff made a whole video explaining that your casual dismissal of freezing beans to preserve freshness is outright falsehood - perhaps from ignorance, but falsehood nonetheless.
