Recipe below (I made this yesterday and it's delicious!) Ingredients: 6 room temperature eggs 1 cup sugar 1 3/4 cup heavy whipping cream 1 1/4 cup mascarpone (room temp) 2 cups espresso (you will need all 2) 2 2/3 tsp rum extract 2 2/3 tbsp turbinado sugar (2) 7.05 oz bags of ladyfingers Cocoa powder for dusting Steps: Separate egg yolks and add the yolks to the sugar in a heat proof bowl. Place bowl over a double boiler and whisk over a low boil for 10 minutes and keep whisking until mixture is cool. Add mascarpone to this mixture and mix well with a whisk. In a separate mixing bowl, beat 1 3/4 cups of heavy whipping cream for 10 minutes, beginning with a low speed and finishing on high speed. Fold the egg mixture into the cream gently being sure they are incorporated. Combine the 2 cups of espresso with the rum extract and turbinado sugar in a shallow bowl to dip the lady fingers in. Take a 13x9 or equivalent casserole dish and spread a thin layer of the mascarpone mixture on the bottom. Place a single layer of lady fingers dipped in the espresso mixture for a few seconds on top of the mascarpone layer. Place half of your remaining mascarpone mixture on top of the dipped lady fingers. Place another layer of dipped lady fingers on top of this mascarpone layer. Place the remaining mascarpone mixture on top of the second layer of lady fingers and refrigerate the tiramisu covered preferably overnight. Remove tiramisu from fridge and use a sifter to dust the top with an even layer of cocoa powder. Enjoy :)

Good tiramisù! A lighter version (and I think more traditional) is to actually use the egg whites instead of cream: you whip them and then fold them gently in the yolk-sugar-mascarpone mixture. It's how I learnt to make it. :)

Smoothest of voices. Very gentle and nurturing. Tiramisu looks fantastic and am going to see whether I can adapt it into a keto dessert. Changing the sugar to Stevia or similar is simple. Need to find good keto substitute for the raw sugar and also some low carb Lady Fingers. Will give it a shot - looks seriously good.
