I tried many recipes. This is the best. Some contain cream, but the mascarpone is already fat and milky on its own. The whipping of the eggs definitely does the trick here, meaning it gives the tiramisu some body, some stiffness. Thanks Chef John.

As always, it looks fantastic, chef. For those who are not comfortable using eggs in the recipe, you can substitute it with whipping cream. Whip the cream to the consistency you'd like the final product to be (stiff or runny). And simply add it to the mascarpone cheese and the rest of the ingredients. I think the alcohol can be omitted. If you like to add a depth of flavor to this simple recipe, add a little bit of honey and use brown sugar along with the white sugar. You can even use some orange juice and zest. It's delicious. :-]

Scott Nassans It was difficult to find lady fingers for me. Milanos have a thin chocolate layer in the middle.

TheKaffeeKlatsch I haven't had Milanos in a long time, so maybe I'm not remembering them correctly, but do you find that they are too soft for this? The point of using ladyfingers is because they're a dry cookie and will absorb the coffee mixture without becoming too soggy, so I'm thinking Chessman cookies might be better? *EDIT:* _Never mind. Looks like Milanos are indeed a biscuit type cookie. So thanks for the recommendation!_

I tried this a couple weeks ago. I did not buy mascarpone cheese as that alone Is over $20.. So outrageous.. I made my own using heavy whipping cream and lemon juice and it turned out AMAZING. Over 6 people tried my cake and couldnt stop eating it! I used this recipe as well as Crouton Crackerjack's and just changed up the measurements a tiny bit to my taste. I added Kaluha and that right there was the key. I've never tasted something so delicious! It was so sweet but also had a kick from the espresso and Kaluha. The dark chocolate and cocoa powder on it really complimented the cake so well! This was my first time and definitely not my last!

This is my favorite cake. When I was a kid in the 90s and lived in a small town in the 2.5 world country that Israel was in the day, my wish for my Bar Mitzvah at 13 was to have Tiramisu, which I only read about in books. My parents turned to the local...I guess baker because confectioner is too big a word for a cake-maker in a town of 800 people, and asked for it, and he had to drive for hours to the only dairy farm in the country that was producing Mascarpone. To this day, and I've had many Tiramisus since, I hadn't tasted one that compared with that one. Maybe the Mascarpone had gone bad while he delivered it and I should try it with blue cheese, but really, nothing like it.

I use heavy whipped cream instead of egg whites to make it a sweeter dessert and thicker in general to cut. Both recipes are very good. :) And if you do not have access to lady fingers, butter pound cake pieces are a fantastic alternative.
