Tirolean Spinach Dumplings (Tiroler Spinat Knödel). A traditional, healthy meal from Tirol, Austria.
Quick and easy but very tasty recipe if your white bread dried out. All you need is:
450 g of dried white bread (make sure there is no mold of course)
450 g of frozen, chopped spinach (or fresh spinach)
1 medium size onion
1 clove of garlic
1 tbsp salt
1 tbsp pepper
2 eggs
block of cheese
Start by cutting the bread into squares. Chop the onion and heat in plenty of olive oil until golden. Add spinach and garlic paste with salt and pepper. Heat until it is well mixed and then let cool. Once cooled down add to bread with two eggs and mix into a paste. Make dough balls and add squares of cheese in the middle. Cook for 8 minutes and make sure to turn. Once cooked serve with olive oil, balsamic vinegar, parmesan and rucola. Bon appetit.
