Annatto powder, a coloring agent, neutral in taste is now available in mainstream supermarkets in the internationa or Hispanic aisle! Modesty aside ,we used annatto oil to develop margarine'syellow color way back then! By the way, you could make bulk lumpia for cost saving & convenience.They store well in the freezer for a month or two. Separate the batches with wax paper for easy removal! Ilocanos specialize in bagnet, but Kapampangan tocino is the best. Shout out to the Mekenes watching here. Philippine tocino is made with either pork belly or other tender cuts meats with good fat marbling and a little on the sweet side. It is generally marinated a long time to the point of fermentation. You started with a slab of bacon, so I wonder if the bacon slab is cured or uncured or if it is already flavored. We cook tocino in the pan with a bit of water so that the sugar doesn't burn while the meat is being cooked. :) maybe it's best to cook tocino in the pan than in the air frier

Good Wednesday morning Kurt! I'm inspired to make this recipe. I was looking for annatto seeds for the longest time and finally found them a few weeks ago. All I need is the pork belly or bacon. Could you taste the mango flavour? Also with the soy sauce did you still need to add salt? Great intro and I think you're hilarious also. I talk to the flying pests like you. Anatto (aka achiote) is native to central America and readily available in Mexican groceries. It is one of those ingredients that the Spanish took to the Philippines from its American colonies. That is how mangoes got to the Americas from Asia.

Thicker pieces of pork belly will prevent burning. You can avoid cutting your fingers when using a knife by curling your fingers and using your knuckle as a guide when slicing the ingredient. If the knife is sharp it will be so easy to use.
