TOMATO BASIL SOUP
INGREDIENTS
10 quarts of strained Tomato’s
1 Large Onion
16 oz Tomato Paste
½ cup of Brown Sugar
2 Tbsp dried Oregano
½ cup of dried Basil
4 Bay Leaves
3 Garlic Cloves
1 Tbsp Salt
1 Tbsp Black Pepper
1 Tbsp Olive Oil
DIRECTIONS
1. Prepare tomatoes and puree.
2. Press puree through fine mesh strainer.
3. Sauté onion and garlic in a tbsp of olive oil for about 5 minutes. Then puree.
4. Add all ingredients except tomato paste to a large pot.
5. Mix well and then bring to a rolling boil.
6. Reduce heat to a slow simmer for 20 minutes.
7. Add tomato paste to a bowl and add 2 cups of hot water. Stir until blended well.
8. Slowly add blended tomato paste to your pot.
9. Simmer for 20 more minutes.
If you are canning add 2 Tbsp of lemon juice per quart.
If you are freezing allow to cool completely.
