Blessings from Chicago. I have been canning tomato base for years,now. A few years back my Ghanian friend made stew and I fell love with the sauce. I use one of your earlier recipes and she comes to get sauce from my pantry, when she needs it. I love sharing cultures and learning. I've been following you and a few of your friends. Kudos Nana Aba! How much fresh tomatoes would you use in place of tomato sauce...especially those of us who live in africa and have access to fresh tomatoes through out the year?

You’d have to measure the fresh tomatoes after crushing them, and the amount must fit into the same container as your tomato paste, so I’d say start by eye balling the actual amount of tomatoes since it hard to say as they come in different sizes, types and shapes.

The smell in your house of all those aromatics, onions, garlic, ginger, anise, curry , etc . Something like this but much simpler ( because it doesn’t have all those aromatics ). A ? I have is when u use this base how does all those spices and aromas blend with the ones for the specific recipe u making or you can only use this for the specific dish that calls for all those flavors?

Rice dishes such as Jollof with different meat and fish, as well as stews of all kinds, and soups too take well to all the aromatics employed here. Remember, it’s a base, a prominent characteristic of a base is concentration. Try it!

Simply crush them as you normally would and perhaps cook it down to reduce the liquid. Measure the amount desired and you’re in business.

The oil helps with preservation because the stew will be stored . It can be drained later when one cooks with it
